Easy and Delicious Homemade Pickled Radish Wraps Recipe
To fulfill my youngest’s craving for smoked duck with pickled radish wraps, I decided to make my own using fresh, seasonal radishes that are quite affordable right now! These wraps are wonderfully crisp, sweet, and tangy, making them perfect for any kind of wrap. Try making them easily at home!
Main Ingredients- 1 medium radish
Pickling Brine- 3 cups water (720ml)
- 3 cups vinegar (720ml, use regular distilled or apple cider vinegar)
- 2 and 2/3 cups sugar (approx. 480g)
- 1/2 teaspoon salt (approx. 2.5g)

Cooking Instructions
Step 1
First, thoroughly wash and peel the radish. Using a mandoline slicer will make it easy to cut thin, uniform rounds. If your mandoline’s blade is too thick for thin slices, use a sharp knife to cut the radish as thinly as possible. Thinner slices yield a better texture.
Step 2
If you’re using a knife, the key is to slice the radish incredibly thin, almost to the point of translucency. Aim for slices so thin that you can almost see your fingers through them when overlapped.
Step 3
A good test for thinness is to place a slice on your finger; you should be able to see your fingertip through it. Once all the radish is sliced, carefully arrange it in an airtight container or a kimchi jar.
Step 4
Now, let’s prepare the pickling brine. In a saucepan, combine 3 cups of water, 3 cups of vinegar, and 2 and 2/3 cups of sugar. Stir them together.
Step 5
Add the 1/2 teaspoon of salt to the mixture. The salt helps balance the sweet and sour flavors.
Step 6
Bring this mixture to a boil over medium heat. You don’t need to boil it for a long time. As soon as the sugar has dissolved and the liquid just begins to simmer around the edges, turn off the heat. This gentle heat preserves the fresh flavors.
Step 7
Pour the hot pickling brine directly over the thinly sliced radish in the container while it’s still hot. The hot liquid will lightly cook the radish while helping it maintain its crispness.
Step 8
Allow the container to cool completely to room temperature. Once it has cooled and no steam is visible, cover it tightly and refrigerate. For the best flavor, let it chill for at least a day in the refrigerator; the taste will deepen beautifully.
