Cooking Instructions
Step 1
Begin by creaming the softened butter in a large mixing bowl. Use a hand mixer or a whisk to beat the butter until it’s smooth and creamy. Ensure your butter is at room temperature, as cold butter won’t cream properly.
Step 2
Once the butter is creamy, add the granulated sugar, brown sugar, and salt to the bowl. Continue to mix with the hand mixer until the mixture is light in color and has a fluffy, well-combined texture. This step is crucial for the cookie’s texture.
Step 3
Lightly beat the egg in a separate small bowl. Gradually add the beaten egg to the butter mixture, mixing on low speed. Add the vanilla extract (or oil) along with the egg. Incorporate them well but avoid overmixing, as this can lead to tough cookies.
Step 4
Sift the cake flour directly into the wet ingredients. Using a silicone spatula, gently fold the flour into the batter. Use a cutting motion, bringing the batter from the bottom up, until just combined and no dry flour streaks remain. Overmixing at this stage will develop gluten and make the cookies hard.
Step 5
Divide the dough into portions of approximately 20g each. Roll them into balls and flatten them slightly. Place the dough balls onto a baking sheet lined with parchment paper, ensuring they have some space between them. Using a knife or a pastry wheel, gently score a ‘#’ (hashtag) pattern onto the top of each cookie.
Step 6
Bake in a preheated oven at 180°C (350°F) for about 15-18 minutes. The cookies are done when the edges turn golden brown. Keep an eye on them as oven temperatures can vary, and adjust baking time as needed.
Step 7
Once baked, carefully transfer the cookies from the baking sheet to a wire rack. Allow them to cool completely on the rack. They will firm up and become delightfully crisp as they cool. Store in an airtight container once fully cooled to maintain freshness.
