Homemade Mini Gimbap (Kimbap)
Easy & Delicious Mini Gimbap for Lunchboxes or Late-Night Snacks!
In a rush to pack a lunchbox, or craving a simple snack late at night? Why not try these easy and delightful mini gimbap! Their colorful fillings and cute size make them a perfect treat for kids too.
Basic Ingredients- 2 cups cooked rice (day-old rice works well)
- 1 Tbsp sesame oil
- Pinch of salt (for seasoning rice)
- 2 sheets of gim (seaweed for gimbap)
Colorful Fillings- 4 strips pickled radish (julienned)
- 1/4 cucumber (julienned, lightly salted, and moisture squeezed out)
- 1/4 carrot (julienned, lightly seasoned with salt, and stir-fried in a pan with a little oil)
- Thin omelet sheets (pan-fried and julienned)

Cooking Instructions
Step 1
Cut the gim sheets into 2 or 4 equal portions, depending on your desired mini gimbap size. Julienne the pickled radish, cucumber, carrot, and omelet sheets. For the carrots, lightly sprinkle with salt and stir-fry in a pan with a little oil for a better texture.
Step 2
In a bowl with 2 cups of warm cooked rice, add 1 Tbsp of sesame oil and a pinch of salt. Gently mix with a rice paddle, being careful not to mash the rice grains. The rice should be seasoned to taste, similar to how you’d enjoy plain rice.
Step 3
The key to perfect mini gimbap is the amount of rice! Don’t overload the gim with too much rice, as it will make rolling difficult and the shape uneven. Spread about one tablespoon of rice thinly over the gim.
Step 4
Arrange the prepared fillings neatly on top of the rice. Avoid overfilling, as this can cause the gimbap to burst. To seal the roll, you can lightly moisten the edge of the gim with a little water or sesame oil, or use a few grains of rice to help it stick. Begin rolling tightly from one end.
Step 5
Repeat the process to create more mini gimbap. Two cups of rice will yield a generous amount. Once rolled, gently shape them to ensure they are compact.
Step 6
Lightly brush the finished mini gimbap with sesame oil for a glossy finish and sprinkle with toasted sesame seeds. Cut them in half for easy eating, arrange them attractively in a lunchbox, and serve with a soy sauce and mustard dipping sauce. If you have a pre-made master sauce, it will make this even more convenient and delicious!
