Try making your own mild and delicious handmade dumplings at home! They have a subtle yet deep savory flavor that’s perfect for the whole family. If you make the filling ahead and freeze it, you can enjoy tasty dumplings anytime with ease.
Dumpling Filling Ingredients- 1 bunch chives (approx. 35g)
- 300g firm tofu (1 block)
- 300g soybean sprouts (1 bag)
- 300g ground pork
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1/2 Tbsp oyster sauce
- 1 Tbsp cooking wine (mirin, etc.)
- Pinch of black pepper
- 1 egg
- 28 dumpling wrappers (1 pack)
Cooking Instructions
Step 1
First, prepare the soybean sprouts. Blanch them in boiling water, then drain thoroughly by squeezing out all the excess water. Finely chop them with a knife. Avoid chopping them too finely so that the sprouts retain a pleasant crunch.
Step 2
Wash the chives, remove excess moisture, and finely chop them, just like the soybean sprouts. The fragrant chives will add a rich flavor to your dumpling filling.
Step 3
Take one block (300g) of firm tofu. It’s crucial to remove as much water as possible. You can microwave the tofu for about 30 seconds to help evaporate some moisture. Then, wrap it in a clean cloth or paper towels and squeeze firmly to drain. Once drained, mash the tofu using a fork or your hands.
Step 4
Now, let’s make the delicious dumpling filling! In a large bowl, add the 300g of ground pork. Mix in 1 Tbsp minced garlic, 1 Tbsp soy sauce, 1 Tbsp cooking wine, 1 Tbsp sesame oil, 1/2 Tbsp oyster sauce, and a pinch of black pepper. Add the chopped soybean sprouts and chives, and the mashed tofu. Finally, crack in 1 egg. For a smoother filling, using only the egg yolk is recommended (using the white can cause the filling to clump). Mix and knead all the ingredients thoroughly until well combined to create the dumpling filling.
Step 5
It’s time to fill the dumpling wrappers. Lightly brush the edges of each wrapper with egg white. This acts as a ‘glue’ to seal the dumplings securely, preventing them from opening during cooking. Place a spoonful of the filling onto the center of a wrapper. Then, fold and pleat the wrapper to create your desired dumpling shape. Ensure they are sealed tightly so the filling doesn’t leak out.
Step 6
Arrange the prepared dumplings on a steamer basket, making sure to leave some space between them so they don’t stick together. Once the steamer is producing steam, place the dumplings inside and steam for approximately 10 minutes. They are ready when they turn translucent and smell cooked.
Step 7
While the freshly steamed dumplings are delicious, you can also store any leftovers for future enjoyment. Let the steamed dumplings cool down. Arrange them on a tray or plate so they don’t touch each other, and freeze until solid. Once frozen, transfer the dumplings to a resealable bag for easy storage in the freezer. This way, you can conveniently steam or pan-fry them whenever you like.
