Ingredients

  • 5 fresh eggs
  • 100ml milk (for a creamier texture)
  • 1 potato (for a fluffy texture)
  • 2 tbsp grated Parmesan cheese
  • 10 shrimp (peeled and deveined)
  • 3 cloves garlic, thinly sliced
  • 1 handful fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp salt (or to taste)
  • Pinch of black pepper (to taste)

In a large bowl, crack the 5 fresh eggs. Add 100ml of milk for a creamier consistency, along with 1/2 tsp of salt and a pinch of pepper. Whisk everything together thoroughly with a whisk until well combined and no streaks of egg white remain.

Prepare the potato by washing it thoroughly and dicing it into small cubes, about 0.7 cm in size. Slice the onion into 1 cm pieces, and thinly slice the garlic cloves.

Clean the shrimp under running water and remove the shells and the dark intestinal vein. You can leave the tail on for presentation if desired.

Heat 1-2 tbsp of cooking oil in a non-stick skillet over medium heat. Add the sliced garlic, diced potatoes, and sliced onions. Sauté for about 5 minutes, sprinkling a little salt as you cook, until the potatoes begin to soften and become slightly translucent, and the onions are tender.

Add the prepared shrimp to the skillet and cook for another 2-3 minutes until they turn pink. Be careful not to overcook the shrimp, as they can become tough.

Reduce the heat to low. Add the handful of fresh spinach to the pan and stir gently until it just begins to wilt. Avoid overcooking the spinach, as it can become mushy.
