First, prepare 1000ml of regular milk and 150ml of a fermented milk drink for making Greek yogurt. It’s best if all ingredients are at room temperature.

For the fermented milk drink, choose one labeled as ‘Concentrated Fermented Milk’ on the back. These typically contain a good amount of probiotics, which are essential for yogurt fermentation and increase the success rate. A drinkable type is generally more suitable than a spoonable yogurt.

Select a microwave-safe bowl with ample capacity. Both plastic and glass containers are suitable.

Pour the entire 1000ml of regular milk into the prepared microwave-safe bowl. Be careful not to overfill.

Place the bowl in the microwave and heat for 2 minutes. This step gently warms the milk, creating an optimal environment for the probiotics to thrive.

Once the bowl is removed from the microwave, add the 150ml of concentrated fermented milk (probiotic drink) to the warmed milk.

Using a plastic or wooden spoon, gently stir the milk and fermented drink until well combined. Avoid using metal spoons, as they can sometimes interfere with the activity of live cultures.

Remove the bowl from the microwave, cover it with its lid or seal it with plastic wrap. Place it back in the microwave and let it ferment for 7 to 8 hours. The fermentation time can vary depending on the ambient room temperature; warmer environments will speed up the process.

Line a sieve with a clean cheesecloth (or a fine-mesh cloth) and place it over another bowl. Carefully pour the yogurt into the cheesecloth. The cloth will act as a filter to strain out the whey (liquid).

Gather the edges of the cheesecloth and secure them tightly with a clip or string. Place the setup (sieve with yogurt) over a bowl and let it sit for about 1 hour, either in the refrigerator or at room temperature. This allows the whey to drain into the bowl below.

After 1 hour, open the cheesecloth. You’ll notice a significant amount of clear, yellowish liquid (whey) has drained out. You can discard the whey or save it for other culinary uses.

At this point, if the yogurt has a consistency you like, you can enjoy it. However, for a truly thick and dense Greek yogurt, re-wrap the yogurt in the cheesecloth and place it back in the refrigerator for an additional 5 to 6 hours (or even longer) to allow more whey to drain.

The next day, when you take the yogurt out of the refrigerator, it will be considerably thicker and denser than before, resembling the consistency of cream cheese.
