Jokbal Boiling Ingredients

  • 1000g Pig’s Trotters
  • 1 Onion
  • 1 Apple
  • 1/3 Daikon Radish
  • 1 Carrot
  • 4-5 Dried Red Chilies
  • 8-10 cloves Garlic
  • 2 slices Ginger (thumb-sized)
  • 20 Peppercorns
  • 1 Cinnamon Stick
  • 1 cup Soy Sauce
  • 0.5 cup Sugar
  • 2 Tbsp Corn Syrup (or Rice Syrup)
  • 1/2 cup Cheongju (Rice Wine) or Cooking Wine
  • 7 cups Water
  • 2 Tbsp Sesame Oil

Cooking Instructions

(Check out the video above for an even easier way to follow the recipe!) First, rinse the 1000g of pig’s trotters thoroughly and soak them in cold water for at least 6 hours to remove any blood. Properly removing the blood is key to a clean-tasting Jokbal.

After soaking, boil the trotters in water with 1 tablespoon of soybean paste and 1 slice of ginger (thumb-sized) for about 15 minutes. This step helps remove impurities and any lingering gamey smell. Drain the water, rinse the trotters briefly under running water, and let them cool slightly.

Now, let’s prepare the aromatic vegetables that will add flavor to the Jokbal. Chop the onion into large pieces, quarter the apple, and cut the daikon radish into large chunks. Slice the carrot into large pieces as well. Prepare the dried red chilies, whole garlic cloves, the remaining ginger slice, peppercorns, and cinnamon stick.

Place all the prepared aromatic vegetables, dried chilies, garlic cloves, peppercorns, and cinnamon stick into a mesh bag (or spice bag). This makes it easier to remove them later and keeps the broth clear.

Now, let’s prepare the delicious soy sauce base for boiling the Jokbal. In a large pot, combine 1 cup of soy sauce, 7 cups of water, and 0.5 cup of sugar, mixing well. Add 2 tablespoons of corn syrup (or rice syrup) and 0.5 cup of Cheongju (rice wine) or cooking wine to eliminate any unwanted odors and enhance the savory flavor. (Tip: You can adjust the amount of sugar or syrup to your preference.)

It’s time to boil the Jokbal! Add the parboiled trotters, the mesh bag with aromatics, and the prepared soy sauce base to the pot. Bring to a boil over high heat, then reduce to medium-low and simmer for at least 2 hours, or until the trotters are tender. Turning the trotters occasionally will ensure even coloring.

Once the Jokbal has simmered for 2 hours, remove it from the heat and let it cool down for a bit. It’s best to let it cool until it’s just warm to the touch, as cutting it while too hot can cause it to fall apart.

To give the Jokbal a beautiful sheen and enhance its flavor, brush 2 tablespoons of sesame oil all over the cooled trotters. This will make them look appetizingly glossy.

Finally, for hygiene and an added smoky flavor, you can lightly scorch the surface of the Jokbal with a kitchen torch to remove any stray hairs. This step is optional but recommended for a professional finish. (This step can be skipped.)
