It’s a healthier alternative to regular sugar or honey for sweetening your cooking. Let’s elevate your culinary creations with this essential garlic syrup!
Main Ingredients- 1/2 bunch peeled garlic (approx. 1kg)
Seasoning- Sugar (2/3 the amount of minced garlic)
- 3 cups Acacia honey (approx. 720ml)
- Sugar (2/3 the amount of minced garlic)
- 3 cups Acacia honey (approx. 720ml)
Cooking Instructions
Step 1
First, peel all the garlic cloves and rinse them thoroughly under cold running water. Drain the garlic well. For best results, rinse the garlic the evening before and let it drain overnight to ensure it’s completely dry. Patting it dry with paper towels will further help in preserving the syrup.
Step 2
Next, mince the cleaned garlic. If using a food processor or blender, be careful not to mince it too finely, as a slightly coarser texture can add a pleasant bite to the syrup. Aim for a consistency that still has a bit of texture.
Step 3
Add sugar to two-thirds of the minced garlic, using the minced garlic’s volume as a reference for the sugar amount. Mix well until the garlic and sugar are thoroughly combined. The sugar helps to draw out moisture from the garlic and acts as a preservative. Set aside the remaining one-third of the sugar.
Step 4
Transfer the minced garlic and sugar mixture into a sterilized glass jar or airtight container. Pour 2 to 3 cups (approx. 720ml) of Acacia honey over the garlic mixture. The honey will mellow the garlic flavor and add a lovely aroma.
Step 5
Finally, sprinkle the reserved one-third portion of sugar over the honey. This layering helps the ingredients meld together beautifully during the aging process, creating a more complex flavor profile.
Step 6
Seal the jar tightly and store it in a cool, dark place for 3 to 4 months to age. During this time, the sugar on top will dissolve completely into the honey and garlic. After 3-4 months, once the sugar has fully dissolved, shake the jar to mix everything together. Store in the refrigerator and use this delicious garlic syrup to add depth and sweetness to your braised dishes, stir-fries, soups, and more!
