DIY Umami Flavor Powder from Your Freezer Stash: A Simple Recipe for Homemade Furikake
Create your own delicious furikake right at home! This recipe uses ingredients you likely already have in your freezer. Simply combine them and pulse in a food processor for a versatile, flavorful seasoning that elevates any meal.
Ingredients- 50g dried anchovies (jiri-myeolchi)
- 10g dried seaweed (miyeok)
- 30g dried shrimp
- 5g dried kelp (dashima)
- 10g dried shiitake mushrooms
- 20g almonds
- 10g toasted sesame seeds
- 1 Tbsp Mascobado sugar (or to taste)
Cooking Instructions
Step 1
Begin by gathering your dried ingredients and nuts from your pantry or freezer. This includes dried anchovies, dried seaweed, dried shrimp, dried kelp, dried shiitake mushrooms, and almonds. These form the base of our flavorful furikake, so using fresh, good-quality ingredients will make a difference.
Step 2
In a dry pan over low heat, toast all the prepared ingredients except for the sesame seeds. Stir continuously to prevent burning. Toasting them until they become crisp will enhance their nutty flavor and aroma, resulting in a more delicious furikake. If using anchovies, removing the heads and guts can reduce any fishy odor.
Step 3
Once the ingredients are nicely toasted and crisp, carefully transfer them to a sieve. Gently shake to remove any fine dust or any burnt bits that may have accumulated during toasting. This step ensures a clean and pleasant texture for your furikake.
Step 4
Place the toasted and sifted ingredients into a food processor or blender. Pulse until you achieve your desired consistency. You can make it very fine or leave some texture for a more satisfying bite. Be careful not to over-process, as this can cause the mixture to clump.
Step 5
Add the toasted sesame seeds and Mascobado sugar to the processed mixture. Pulse a few more times, just enough to incorporate them evenly. The sesame seeds add a wonderful nuttiness, while the Mascobado sugar provides a subtle sweetness and depth of flavor. Adjust the sugar amount to your preference.
Step 6
Transfer the finished homemade furikake to an airtight container. Store it in the freezer to maintain its freshness for a long time. Sprinkle this versatile seasoning generously over warm rice, mix into salads, or use it to add a flavorful kick to any dish. Enjoy the homemade goodness!
