Using frozen strawberries allows you to enjoy the fresh taste year-round. We freeze our strawberries when they’re at their peak to use them later like this. First, take the frozen strawberries out of the freezer, let them thaw naturally, and then use them as they are. You’ll be able to enjoy a fresh strawberry taste just like using fresh ones.

The key ingredient for this recipe is ‘Yori-en Rice Flower Nuruk’. This dried rice starter powder is very convenient as you can use it directly in drinks or dishes without any extra preparation.

Compared to traditional rice grain nuruk, ‘Yori-en Rice Flower’, being in powder form, can create a thicker and richer texture with a smaller amount. This is due to the difference in volume of the powder, allowing you to enjoy a rich flavor with less quantity.

After mixing the strawberries, nuruk powder, and water, you can also choose not to blend them immediately. Instead, utilize a warming function to keep the mixture warm. This allows for a gentle fermentation process.

This step is not about ‘boiling’, but rather about maintaining a ‘lukewarm, warm temperature’ to prevent the ingredients from spoiling. Temperatures that are too high can hinder fermentation.

If you want to make the ade to drink right away, it’s best to blend all the ingredients thoroughly after mixing and then use the warming function. You can immediately enjoy a smooth texture and rich strawberry flavor.

Prepare a fermentation-dedicated rice cooker or a container with a warming function. (The photo shows my mother’s fermentation rice cooker!) If you happen to use a jar that is too large or has a lid that doesn’t close properly, pay close attention to the next step.

It’s best to cover the container loosely, without completely sealing the lid. Fermentation may not occur properly if the air is completely blocked.

You can cover the lid lightly with a plate, or slightly open the rice cooker lid to keep it warm. After warming for about 2 hours this way, continue the fermentation by keeping the lid slightly ajar, as if resting it on top.

Caution! Do not screw the lid on tightly. Ferment for a total of 8 hours. Actor Park Jung-soo from ‘Convenience Store Restaurant’ typically warms his for about 3 hours. I fermented mine for a longer period, 8 hours, following a method similar to making rice yogurt, to achieve a deeper flavor.
