Homemade Crispy and Moist Garlic Bread

Sometimes you just crave garlic bread! I made it to be perfectly crispy on the outside and wonderfully moist on the inside.
Bread Dough Ingredients- 85g Bread flour (high-gluten flour)
- 85g All-purpose flour
- 2g Salt
- 2g Active dry yeast
- 4g Sugar
- 5g Butter (unsalted, softened)
- 110g Water (lukewarm)
Garlic Sauce Ingredients- 1.5 Tbsp Minced garlic
- 50g Butter, melted
- 50g Oligosaccharide or honey
- 1 tsp Salt
- 1 Tbsp Dried parsley flakes
- 1.5 Tbsp Minced garlic
- 50g Butter, melted
- 50g Oligosaccharide or honey
- 1 tsp Salt
- 1 Tbsp Dried parsley flakes
Cooking Instructions
Step 1
In a large bowl, combine the bread flour and all-purpose flour. Make three small wells in the flour mixture. Place the salt in one well, the dry yeast in another, and the sugar in the third. Gently cover each ingredient with a little flour. This separation helps ensure proper yeast activation.
Step 2
Pour the lukewarm water over the flour mixture. Begin to mix with a spatula or your hands until a shaggy dough forms and no dry flour remains.
Step 3
Once the dough comes together, add the 5g of softened butter. Knead the dough vigorously for about 10 minutes. Stretch and fold the dough repeatedly. Continue kneading until the dough is smooth, elastic, and no longer sticks to your hands. It should be able to stretch thinly without tearing, forming a ‘windowpane’.
Step 4
Place the kneaded dough in a lightly oiled bowl. Cover the bowl with plastic wrap or a damp cloth. Let the dough rise in a warm place for its first proofing until it has approximately doubled in size (about 40-60 minutes). The rising time can vary depending on the room temperature.
Step 5
After the first proof, gently punch down the dough to release the gases. Transfer the dough to a lightly floured surface, shape it into a ball (round), and cover it with plastic wrap or a damp cloth. Let it rest for 30 minutes. This ‘bench rest’ relaxes the gluten, making the dough easier to shape.
Step 6
Lightly flour your work surface. Place the rested dough on it and gently flatten it with your palms into a round shape. Then, starting from one edge, tightly roll up the dough like a jelly roll or Swiss roll. Ensure it’s rolled firmly to avoid air pockets.
Step 7
Pinch the seam of the rolled dough firmly with your fingers to seal it completely. This prevents the bread from opening up during baking.
Step 8
Cover the shaped dough again with plastic wrap or a damp cloth. Let it undergo its second proof in a warm place until it has increased in size by about 1.5 times (approximately 30-40 minutes).
Step 9
Once the second proof is complete, it’s time to score the top of the dough. Using a sharp knife or a bread lame, make 2-3 long, shallow cuts across the top of the bread. These scores allow the bread to expand beautifully in the oven.
Step 10
Preheat your oven to 200°C (390°F). Just before baking, spray the inside of the oven with water 2-3 times to create steam. This helps achieve a crispier crust. Place the scored dough in the oven and bake for about 17 minutes, or until golden brown. Once baked, transfer the bread to a wire rack to cool completely.
Step 11
While the bread is cooling, let’s prepare the delicious garlic sauce.
Step 12
In a small bowl, combine all the garlic sauce ingredients except for the parsley flakes: minced garlic, melted butter, oligosaccharide or honey, and salt. Place this bowl over a pan of hot water (bain-marie) and stir until the butter is fully melted and all ingredients are well combined.
Step 13
Once the butter has melted and the mixture is smooth, stir in the dried parsley flakes. Your fragrant garlic sauce is ready!
Step 14
Using a serrated bread knife, carefully slice the cooled bread into approximately 1.5cm (about 0.6 inches) thick pieces. Be gentle to avoid crumbling the bread.
Step 15
When slicing, try to keep one side of the bread attached so the slices don’t separate completely. This makes it easier to apply the sauce and helps maintain the bread’s structure.
Step 16
Generously brush the prepared garlic sauce between each slice of the bread. Ensure the sauce gets well into the cuts.
Step 17
After saucing between the slices, place the bread on a baking sheet lined with parchment paper. Brush any remaining garlic sauce all over the top of the bread for extra flavor.
Step 18
Bake in a preheated oven at 170°C (340°F) for about 10 minutes, or until the top is golden brown and the edges are crispy.
Step 19
Voilà! Your homemade garlic bread, perfectly crispy outside and tender inside, is ready. Unlike bread that’s just crispy all over, the sweet and flavorful garlic sauce coats the crunchy exterior and soft interior, creating an irresistible taste.
