Ingredients- 1L Cooking Oil (recycled from frying)
- 1 cup Scallion Roots (washed clean)
- 2/3 cup Chili Seeds
- 3 Tbsp Chili Powder
Cooking Instructions
Step 1
Pour the 1 liter of leftover frying oil into a wide wok or deep pan. Gently heat it over medium heat. Allow the oil to warm up slowly, letting any sediment settle to the bottom.

Once the oil is adequately warm, add the 1 cup of washed and dried scallion roots. Simmer gently for about 10 minutes, allowing the fragrant scallion aroma to infuse into the oil. Be careful not to let the heat get too high during this step.

After the scallion has imparted its flavor, add the 2/3 cup of chili seeds to the pan. The chili seeds will toast in the oil, adding their characteristic spicy aroma and rich color. Continue simmering for another 5 minutes to extract their full flavor.

Finally, add the 3 tablespoons of chili powder. Stir immediately to prevent clumping. Simmer for another 2-3 minutes on low heat, allowing the chili powder to release its vibrant red color and spicy flavor without becoming bitter. Reduce the heat to low.

Turn off the heat. Carefully strain the finished chili oil through a fine-mesh sieve or cheesecloth into a clean bowl. Be cautious as the oil is hot. Avoid pressing the solids too hard, as this can make the oil cloudy. Gently press to extract the oil.
