For an extra special treat, try warming it slightly in the microwave – you’ll be surprised by its wonderfully soft and rich flavor. It’s a recipe anyone can easily follow, so create sweet moments with your loved ones!
Cake Base Ingredients
- 500g pancake mix
- 2 eggs
- 400ml milk
Cooking Instructions
Step 1
First, let’s make the cake base. Sift 500g of pancake mix to ensure it’s fine and free of lumps. In a bowl, lightly beat 2 eggs, then add the sifted pancake mix and 400ml of milk. Mix gently until just combined, being careful not to overmix, which helps create a tender cake.
Step 2
Now, it’s time to prepare the rice cooker. Lightly grease the inside of the rice cooker pot with cooking oil, ensuring an even coating so the cake doesn’t stick. Pour the batter into the greased pot. Select the ‘Steaming’ or ‘Cake’ function on your rice cooker (if available) and cook for about 1 hour. If your rice cooker has different settings, choose the longest steaming course. Once done, open the lid and check if the cake base is fully cooked.
Step 3
Once the cake base is baked, let it cool slightly, then carefully slice it in half horizontally using a serrated knife. For the whipped cream, pour 250ml of heavy whipping cream into a bowl (or blender). Add about 3 tablespoons of sugar and whip until stiff peaks form. If using a blender, be cautious not to over-blend, as the cream can separate. Spread a layer of the prepared whipped cream onto the bottom half of the cake base. Arrange the washed and prepared fruits like Shine Muscat grapes, strawberries, and tangerines decoratively on top of the cream.
Step 4
Carefully place the top half of the cake base back onto the fruit layer. Now, cover the entire cake, including the sides and top, with the remaining whipped cream. If you have a cake turntable, use it to help spread the cream evenly and smoothly for a more polished finish. Don’t worry if it’s not perfect on your first try; a rustic charm is lovely too!
Step 5
Finally, it’s time to decorate your cake! Freely use the remaining fruits or other toppings you like (such as mint leaves or chocolate shavings) to add your personal touch. A cake that looks beautiful is often even more enjoyable to eat.
Step 6
Slice your lovingly homemade cake into portions and share sweet, happy moments with your loved ones. This special cake made with a rice cooker, boasting its unique texture, is sure to create unforgettable memories!
