Ingredients- 200g fresh ginger
- 200g brown sugar
- 200g water
- 5 whole black peppercorns
- 5 cardamom pods (seeds only)
- 2 dried red chilies
- 5 whole cloves
- 1 cinnamon stick
- 1 Tbsp fresh lemon juice
- 2 lemon slices (for garnish)
- Soda water (to taste)
Cooking Instructions
Step 1
Begin by thoroughly washing the 200g of fresh ginger. Peel it, then thinly julienne or slice it into fine strips. This preparation helps to maximize the extraction of ginger’s zesty flavor.
Step 2
In a bowl, combine the julienned ginger with the 200g of brown sugar. Gently toss them together, ensuring the sugar coats the ginger well. This step starts the process of drawing out moisture and concentrating the ginger’s essence.

Let the ginger and brown sugar mixture sit and marinate for 2 to 3 hours, or even overnight. If it’s a warm summer day, it’s crucial to refrigerate the mixture during this time to prevent spoilage. This allows the flavors to meld beautifully.

Prepare your aromatic spices for the ginger ale. For the cardamom, remove the outer pods and use only the seeds for a more potent aroma. Gather the whole black peppercorns, dried red chilies, whole cloves, and the cinnamon stick.

After simmering, allow the syrup to cool down completely. Once cooled, stir in 1 tablespoon of fresh lemon juice. Adding lemon juice after cooling helps preserve its vibrant flavor and vitamin content.
