Easy Air Fryer Blueberry Cookies for Kids (Rice Flour & Starch Baking)
These are healthy and delicious blueberry cookies, perfect as a snack for children, and adults will love them too! You can adjust the quantities as needed, keeping the same ratios. Making them with your baby is a fun experience, especially with their interesting texture! They’re baked using rice flour and starch for a delightful gluten-free treat.
Ingredients- Mashed blueberries or blueberry juice/drink 200g
- Plain yogurt 100g
- Starch (corn starch, potato starch, etc.) 200g
- Cake flour (rice flour) 200g
Cooking Instructions
Step 1
In a bowl, combine the mashed blueberries (or blueberry juice/drink) with 100g of plain yogurt. Mix them together until smooth and well combined, creating a lovely purple base for your cookie dough.
Step 2
In a separate bowl, sift together the 200g of starch and 200g of cake rice flour. Sifting the dry ingredients helps to remove lumps and ensures an even texture in your cookies. Do this gently, as flour can be dusty.
Step 3
Add the sifted dry ingredients to the blueberry-yogurt mixture. Stir until a dough forms. The starch will contribute to a shiny, firm dough that’s wonderfully pliable. Mix until just combined.
Step 4
Lightly dust your hands with starch or rice flour to prevent sticking. Take portions of the dough and roll them into small balls. This step is incredibly fun for little hands and makes for a great sensory play activity. It’s a wonderful recipe to do with your child!
Step 5
Line your air fryer basket with parchment paper and arrange the cookie balls, leaving some space between them. If you have leftover dough, store it in an airtight container in the refrigerator. Preheat your air fryer to 140°C (285°F) and bake for about 20 minutes. Baking time may vary depending on your air fryer model.
Step 6
The cookies will emerge from the air fryer with a beautiful, vibrant color from the blueberries.
Step 7
Carefully remove the cookies from the air fryer and transfer them to a wire cooling rack. Allow them to cool completely.
Step 8
Once cooled, these cookies have a delightfully crisp exterior and a chewy, tender interior. The lingering tartness of the blueberries makes them incredibly moreish. They’re also great as a teething rusk for babies who are experiencing sore gums!
