Blueberries are a fantastic fruit that are said to become even more nutritious and flavorful when frozen. Freezing them also allows for long-term storage, making them a versatile ingredient to enjoy year-round. This recipe guides you through creating a rich and delicious blueberry compote with ease. Topping your French toast or serving it with Greek yogurt will transform a simple brunch into a delightful feast!
Ingredients- 500g frozen blueberries
- 400g granulated sugar (adjust to taste)
- 2 Tbsp fresh lemon juice
Cooking Instructions
Step 1
Prepare the frozen blueberries. Gently rinse them under cold running water by swishing them around lightly. Be careful not to wash them for too long, as this can cause the blueberries to break apart.
Step 2
Place the rinsed blueberries (500g) into a saucepan. Add all the sugar (400g). You can adjust the amount of sugar based on the sweetness of the blueberries and your personal preference.
Step 3
Using a spatula or spoon, gently stir the blueberries and sugar together until they are evenly mixed. Ensure the sugar coats the surface of the blueberries.
Step 4
Place the saucepan over medium heat and bring it to a simmer. Initially, the sugar will start to dissolve, releasing its juices.
Step 5
As the blueberries cook and release their liquid, you’ll see a naturally forming sweet and fragrant fruit sauce. The color of the blueberries will deepen during this process.
Step 6
Stir occasionally with your spatula to prevent sticking to the bottom of the pan. Once the mixture begins to thicken like jam, reduce the heat to low and let it simmer gently.
Step 7
When the sauce has reduced to your desired consistency, add the fresh lemon juice (2 Tbsp) and stir well to incorporate. Lemon juice not only enhances the sweetness and adds a refreshing flavor but also helps maintain a vibrant color.
Step 8
Continue to simmer over low heat, stirring occasionally. The compote is ready when it has thickened enough that the sauce slowly drips off the spatula, or when you can draw a line on the bottom of the pan with your spatula that briefly holds its shape. Avoid overcooking, as it can become too firm. Check the consistency carefully.
Step 9
Carefully transfer the warm compote into sterilized glass jars. Fill them to the brim and seal tightly. Properly stored in the refrigerator, the compote can be enjoyed for up to 2 weeks. Let it cool completely before refrigerating.
