Once cooled, transfer the toasted almonds into a blender or food processor. A powerful blender designed for nuts will yield the smoothest results.

Initially, the almonds will be ground into coarse crumbs. Continue blending. As the oils are released from the almonds, they will start to clump together and become smoother. Keep blending until you reach a powdery consistency.

To prevent the blender motor from overheating and to ensure even grinding, it’s best to blend in intervals. Stop the blender periodically, open the lid, and use a spatula to scrape down the sides, gathering the almond powder towards the center. Repeat this process of blending, scraping, and resting. This will help create a smoother butter and is gentler on your appliance. (My blender needed about 10-12 such intervals to reach the desired consistency.)

Once the almonds have become a fine powder, add the 2 tablespoons of olive oil. The olive oil will help create a creamier, smoother texture for your almond butter. Blend again until well combined.
