Cooking Instructions
Step 1
Begin by preparing your fresh vegetables. To ensure they are free from pesticides and impurities, immerse them in water with a vegetable wash solution for 20 minutes, then rinse thoroughly under running water. This is especially important for vegetables you’ll be using with their skin.
Step 2
Crush the garlic cloves using the side of a knife. This process helps to release allicin, a beneficial compound found in garlic. Place the crushed garlic at the bottom of a pot, then add all the other prepared vegetables. Pour in 200ml of water, cover the pot, and bring to a boil over high heat for 20 minutes. This initial boiling allows the flavors and nutrients to begin infusing.
Step 3
After simmering for 20 minutes, add an additional 200ml of water. This helps to adjust the soup’s consistency and ensures all the ingredients cook evenly.
Step 4
Get your thoroughly washed vegetables ready. You can chop the tomatoes, carrots, onions, potatoes, and celery into manageable pieces. Don’t worry too much about the size, as they will be blended later.
Step 5
Add all the prepared vegetables to the pot. Bring the mixture to a rolling boil over high heat, then reduce the heat to low, cover, and let it simmer gently for 2 hours. This slow cooking process allows all the nutrients from the vegetables to meld into a rich, deeply flavored broth. After 2 hours, the soup will have a thick and concentrated consistency.
Step 6
Once the soup has finished simmering, carefully blend it until smooth using an immersion blender. If you don’t have an immersion blender, a regular blender or food processor will also work perfectly. Blend until all the ingredients are completely smooth. It’s recommended to enjoy a bowl of this Hippocrates Soup every morning on an empty stomach, perhaps with a drizzle of olive oil. Store any remaining soup in an airtight container in the refrigerator and reheat before serving.
