Homemade Recipe for Highway Rest Stop Style Whole Potato Butter Roast

Main Ingredients- 20 baby potatoes (small size)
- 200ml water
- 1 tsp salt (approx. 5g)
- 2 Tbsp sugar (approx. 20g)
- 40g butter
Cooking Instructions
Step 1
First, prepare 20 baby potatoes. Baby potatoes have thin skins and are small, making them ideal for cooking whole. However, if baby potatoes are hard to find, you can use regular potatoes cut into large pieces, about 2-3 cm in size.
Step 2
Wash the baby potatoes thoroughly. You can peel them thinly, or choose to leave the skins on for extra flavor and texture (ensure they are very clean if leaving the skins on).
Step 3
Get a wide frying pan or pot. Place all the prepared potatoes in it. Then, pour in 200ml of water and start heating over high heat.
Step 4
Once the water comes to a rolling boil, reduce the heat to medium. Add 1 tsp of salt, cover the pan with a lid, and let the potatoes simmer for about 7 minutes until they are tender inside.
Step 5
After 7 minutes, remove the lid. If there’s still water remaining in the pan, increase the heat back to high and let it boil rapidly. This step quickly evaporates any remaining moisture, preventing the potatoes from burning as they reduce.
Step 6
When almost all the water has evaporated, lower the heat to medium-low. Add the 40g of butter to the pan and allow it to melt completely. Once melted, gently roll the potatoes around in the pan to coat them evenly with the rich, savory butter.
Step 7
After the potatoes are coated with butter, sprinkle the 2 Tbsp of sugar evenly over the potatoes in the pan.
Step 8
Gently shake the pan or use a spatula to lightly toss the potatoes. This helps the melted butter and sugar to evenly coat the potatoes, creating a subtle caramelization. Be careful not to let them burn.
Step 9
Finally, cover the pan again and continue to cook over low heat for about 10 minutes. During this time, the sweet and savory flavors of the sugar and butter will deeply penetrate the potatoes. To prevent them from sticking to the bottom, lift the lid and stir/toss the potatoes every 3 minutes.
Step 10
Transfer the perfectly roasted potatoes to a serving dish. For an extra touch of sweetness, you can sprinkle a little more sugar on top before serving. They are best enjoyed immediately while warm!
