Steak Ingredients- 200g Chuck Flap Tail (Salchisal)
- Pinch of coarse salt

- 4 cloves fresh garlic
- 1/6 fresh onion
- 1/2 lemon

Cooking Instructions
Step 1
Prepare the 200g of chuck flap tail for the steak. Pat it dry thoroughly with paper towels to remove any excess moisture. Season both sides generously with coarse salt and freshly ground black pepper. Finally, coat evenly with high-quality olive oil. Add the 2 sprigs of rosemary to infuse their aroma. This marination step is crucial for deepening the meat’s flavor.
Step 2
For the herb butter, finely mince the 4 cloves of garlic and the 1/6 onion. Mincing them very small will help them blend smoothly into the butter and distribute their flavor gently.
Step 3
Wash the 1/2 lemon thoroughly. Zest the lemon, finely grating the peel, and then squeeze out the juice. The bright, zesty aroma of lemon will wonderfully complement the herb butter.
Step 4
In a bowl, combine the 60g of softened butter with the finely minced garlic and onion. Add 1 tablespoon of the fresh lemon juice and 1/2 tablespoon of the lemon zest. Finely chop the fresh rosemary and thyme leaves and add them as well for an even more fragrant herb butter. Mix everything thoroughly until well combined.
Step 5
Lay out a sheet of parchment paper. Place the prepared herb butter mixture onto the parchment paper and roll it up tightly, like making a sushi roll, to form a log. Twist the ends of the parchment paper to seal it securely. Refrigerate for at least 30 minutes, or until the butter is firm. This will help it hold its shape when placed on the hot steak.
Step 6
Before cooking the steak, heat a skillet over medium-high heat until it’s nicely hot. Add 2 tablespoons of olive oil. Place the marinated steak in the hot skillet. Sear each side for about 1-2 minutes, until a beautiful golden-brown crust forms. Cooking quickly over high heat helps to lock in the juices, keeping the steak moist and tender.
Step 7
Once the steak is perfectly seared, remove it from the pan. Place a thick slice of the chilled herb butter on top of the hot steak. The residual heat from the steak will slowly melt the butter, infusing it with rich herb flavor. Transfer the steak to a warm plate and serve immediately with the melting herb butter. For a complete meal, consider serving with roasted vegetables or a fresh salad.
