Main Ingredients- 1 medium Zucchini
- 1/3 pack Enoki mushrooms
- 1/2 Onion
Seasoning & Broth- 1 Bouillon cube (or 300ml of anchovy-kelp broth)
- 1/3 Tbsp minced garlic
- 1/2 Tbsp perilla oil (or sesame oil)
- 1 Tbsp shrimp paste brine
- 300ml Water (if using bouillon cube)
- 1 Bouillon cube (or 300ml of anchovy-kelp broth)
- 1/3 Tbsp minced garlic
- 1/2 Tbsp perilla oil (or sesame oil)
- 1 Tbsp shrimp paste brine
- 300ml Water (if using bouillon cube)
Cooking Instructions
Step 1
Begin by sautéing the onion in perilla oil over medium-low heat. This step is crucial for building a flavorful base. Cook until the onion becomes translucent and releases its natural sweetness, which will deepen the stew’s overall taste.
Step 2
Once the onion is softened, add the zucchini, sliced into bite-sized pieces (half-moons are nice), and stir-fry briefly with the onion for about 1-2 minutes. This lightly cooks the zucchini, helping it retain its shape, and infuses it with the nutty aroma of the perilla oil.
Step 3
Now, let’s create the broth. Add the bouillon cube (or your preferred homemade broth) to the sautéed vegetables. Pour in 300ml of water. If you prefer a richer flavor, feel free to use a homemade anchovy-kelp broth. Bring the mixture to a boil over high heat. You can adjust the amount of water to your liking, especially if you’re having this as a main dish instead of a side soup.
Step 4
As the broth comes to a rolling boil, add the enoki mushrooms, separating them into smaller clumps. Enoki mushrooms cook very quickly, so let them simmer for just 1-2 minutes until they soften slightly.
Step 5
Finally, stir in the minced garlic and season the stew with shrimp paste brine. The shrimp paste brine adds a wonderful umami depth and a clean, savory finish. Let it simmer for another moment for the flavors to meld together beautifully. Your delicious zucchini and enoki mushroom stew is now ready to be enjoyed with a warm bowl of rice!
