Main Ingredients

  • 1/2 onion, finely chopped
  • 1/2 broccoli stem, peeled and finely chopped
  • 1 bowl of leftover cooked rice
  • 3 cups of kelp-infused water
  • 1/2 Tbsp dried shrimp powder (optional, adds umami)
  • 1 Tbsp shiitake mushroom powder (optional, adds deep flavor)
  • 1.5 Tbsp fish sauce (adjust to taste)

Cooking Instructions

Step 1

First, wash and finely chop the onion. Peel the tough outer skin of the broccoli stem with a knife, then finely chop it to a similar size as the onion. Heat some perilla oil in a pan and sauté the prepared vegetables over medium-low heat. Feel free to use other leftover vegetables like carrots or zucchini.

Step 1

Step 2

Once the vegetables are slightly tender, add the dried shrimp powder and stir-fry together. If you don’t have shrimp powder, you can omit it, but it significantly enhances the porridge’s savory depth.

Step 2

Step 3

Next, add the shiitake mushroom powder and continue to sauté. Shiitake mushroom powder is also optional, but it greatly improves the porridge’s rich flavor and aroma. Stir everything together until well combined.

Step 3

Step 4

Add the leftover cooked rice to the pan. Use a spatula to gently break apart the rice clumps so the porridge becomes smoother. This step ensures a creamier and more delicious porridge.

Step 4

Step 5

Pour in 3 cups of kelp-infused water and bring to a boil over high heat. You can also use rice water. Once boiling, reduce the heat to medium-low.

Step 5

Step 6

When the porridge is bubbling nicely, generously add the perilla seed powder for its nutty aroma. Stir well to prevent lumps. Let it simmer for another 2-3 minutes until the porridge reaches your desired thickness.

Step 6

Step 7

Finally, season with fish sauce to taste. Fish sauce adds a delightful savory note, so it’s best to add it gradually, tasting as you go, to suit your preference. Stir well to combine. Your delicious vegetable perilla seed porridge is now ready!
