Hearty Tuna and Tofu Rice Bowl
Serve over rice for a delicious meal! Tuna and Tofu Rice Bowl
It’s been a while since I’ve made a simple dish with tofu! I usually grill it or add it to stews, but this recipe is special. You don’t need many ingredients – just a can of tuna, tofu, and green onions. I made it easily and served it over rice for a quick and satisfying meal. Enjoy this simple yet wholesome rice bowl!
Main Ingredients- 1 can (150g) tuna, including the oil
- 1 block (approx. 300g) tofu
- 1 green onion (separate white and green parts)
Cooking Instructions
Step 1
First, heat a pan over medium heat. Add the entire can of tuna (150g) with its oil. The oil from the tuna will add richness, so don’t discard it! Finely chop half of the white part of the green onion and add it to the pan. Sauté the tuna and green onion together until fragrant.
Step 2
Once the tuna and green onion begin to meld, stir in 1 tablespoon of fine gochugaru. Be careful not to burn the chili flakes. Sauté for about 1 minute over low heat to release the chili oil, which will enhance the color and spicy flavor of the dish.
Step 3
Next, prepare the tofu. Rinse the block of tofu (about 300g), pat it dry, and cut it into small cubes, approximately 1.5 to 2 cm. Add the cubed tofu to the pan. Gently stir to combine without breaking the tofu. Then, add 2 tablespoons of soup soy sauce for seasoning.
Step 4
Pour in 2 cups of the prepared kelp and anchovy broth. The broth should generously cover the ingredients. Stir gently to mix everything well, then increase the heat to high and bring it to a boil.
Step 5
Once the mixture is boiling vigorously, add the finely chopped green parts of the remaining half green onion. These green pieces will add color and a fresh flavor. Finally, add 1/2 teaspoon of black pepper, stir gently once more, and then reduce the heat to low.
Step 6
This is the final step. In a small bowl, whisk together 1 tablespoon of cornstarch and 2 tablespoons of water until smooth to create a cornstarch slurry. This will prevent lumps. Slowly pour the slurry into the simmering bowl while stirring constantly to ensure an even consistency. Cook for another minute until the sauce thickens beautifully, coating the ingredients. Turn off the heat and serve generously over warm rice. Enjoy your delicious meal!
