Noodle Ingredients

  • 1/4 onion
  • 1/5 cucumber
  • 1/8 pear
  • 3 lettuce leaves

Boiled Pork (Suyuk) Ingredients

  • 200g pork (shoulder or leg)
  • 1/4 onion
  • 1/2 green onion stalk
  • 1/2 Tbsp doenjang (soybean paste)
  • 3 cloves garlic

Spicy & Sweet Bibim Sauce

  • 1 Tbsp gochujang (red chili paste)
  • 1/2 Tbsp gochugaru (red chili flakes)
  • 1 Tbsp sugar
  • 2 Tbsp vinegar
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1/2 Tbsp minced garlic
  • Sesame seeds (for garnish)

Cooking Instructions

First, let’s prepare the tender boiled pork (suyuk). In a pot, place the 200g of pork (for 2 servings) and add enough water to cover it completely. For added flavor and to remove any gamey odor, add 1/4 onion, 1/2 green onion stalk, 3 cloves of garlic, and 1/2 Tbsp of doenjang. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 30-40 minutes, or until the pork is tender when pierced with a fork. Ensure no pink juices are released.

While the pork is boiling, prepare the fresh vegetable toppings for the naengmyeon. Wash and pat dry the lettuce leaves, then thinly slice them into bite-sized pieces. Thinly slice the onion as well. Slice about 1/5 of a cucumber into thin half-moons or julienne it. These crisp vegetables will add a delightful texture to your noodles.

Prepare the pear for a touch of sweetness. Slice about 1/8 of a pear into thin strips. The cool, sweet flavor of the pear complements the spicy bibim naengmyeon perfectly.

In a bowl, combine 1 Tbsp gochujang, 1/2 Tbsp gochugaru, 1 Tbsp sugar, 2 Tbsp vinegar, 1 Tbsp soy sauce, 1/2 Tbsp minced garlic, and 1 Tbsp sesame oil. Mix well until fully incorporated. Finally, sprinkle some sesame seeds for an extra nutty aroma. This makes about 2 servings of sauce.

Add the noodles and cook for approximately 3 minutes, slightly less than the package instructions, to prevent them from becoming too soft. Stir occasionally to prevent the noodles from sticking together.

As soon as the noodles are cooked, immediately drain them in a colander and rinse thoroughly under cold running water. This step removes excess starch, resulting in delightfully chewy and springy noodles. Drain the noodles completely, place them in a serving bowl, and mix them with the Dongji Bibim Naengmyeon sauce packet (or your homemade bibim sauce). Toss until well combined.
