This tofu salad features a delightful combination of cooked and fresh tomatoes, offering a rich flavor profile and satisfying texture. By thoroughly draining the tofu, this salad becomes incredibly filling, making it an excellent choice for a healthy and diet-conscious meal.
Salad Main Ingredients- 1 block Tofu
- 2-3 Tbsp Olive Oil
- 2+ Fresh Tomatoes (cherry tomatoes also work well)
- A small amount of Carrot
- A handful of fresh Lettuce
- Pinch of Salt (optional)
Flavorful Dressing- 2 Tbsp Soy Sauce
- 2 Tbsp Olive Oil
- 1 tsp Usukji Root Syrup (or Honey)
- 1 Tbsp Sesame Oil
- 1 tsp Minced Garlic
- Pinch of Black Pepper
Optional Add-ins for Extra Richness- 1/4 Apple
- 1 Hard-boiled Egg
- A handful of Mixed Nuts (e.g., Haru Nuts)
- A small amount of Sausage
- 2 Tbsp Soy Sauce
- 2 Tbsp Olive Oil
- 1 tsp Usukji Root Syrup (or Honey)
- 1 Tbsp Sesame Oil
- 1 tsp Minced Garlic
- Pinch of Black Pepper

- 1 Hard-boiled Egg

Cooking Instructions
Step 1
Drain the tofu thoroughly by placing it in a colander. For better results, press it with paper towels to remove excess water.
Step 2
Wash the fresh tomatoes and cut them into bite-sized pieces.
Step 3
Peel the carrot and then thinly slice it using a vegetable peeler. Slicing the carrot thinly this way allows it to blend beautifully with the salad greens, enhancing the overall taste.
Step 4
Cut the drained tofu into cubes (square pieces). Heat a pan over medium heat, add 2-3 tablespoons of olive oil, and place the tofu in the pan. Pan-fry until golden brown. Seasoning with salt is optional; you can omit it to balance the flavor with the soy sauce dressing.
Step 5
Once the tofu is golden brown, add the thinly sliced carrots and sauté together. When the carrots are slightly tender, add half of the sliced fresh tomatoes. Drizzle a little more olive oil and sauté everything together. The sweetness of the cooked tomatoes will add depth of flavor to the salad.
Step 6
In a small bowl, combine all the dressing ingredients: soy sauce, olive oil, Usukji root syrup (or honey), sesame oil, minced garlic, and black pepper. Mix well. Adjust the amount of soy sauce and olive oil to your preference. You can also add a splash of vinegar for a refreshing tang.

Tear the lettuce into bite-sized pieces and place them in a large bowl. Add the pan-fried ingredients (tofu, sautéed carrots, and tomatoes) and the fresh sliced tomatoes. Pour the prepared dressing evenly over the salad and gently toss to combine, being careful not to mash the ingredients. You can substitute lettuce with other salad greens like baby greens or romaine lettuce if you prefer.

Optional additions like hard-boiled eggs, nuts, apple, or sausage can be added to make the salad even richer. However, the salad is already satisfying and delicious with the basic ingredients alone. Enjoy your meal!
