I had a few pieces of leftover fried chicken from a delivery. I decided to make a tomato stew with some tomatoes, which also helped use up some slightly wilted tomatoes from the fridge. The result was a delicious dish!

Main Ingredients

  • Leftover chicken pieces: 7 (meat only, bones removed)
  • Tomatoes: 200g (about 2 medium)
  • Potato: 1 medium
  • Onion: 1/4
  • Carrot: 40g
  • Whole garlic cloves: 5

Cooking Instructions

First, prepare your leftover chicken. If there are any bones, carefully remove the meat and set it aside. (Tip: Often, only breast meat is left, but don’t worry! Any part of the chicken meat can be used deliciously.)

Wash the tomatoes thoroughly. To make peeling easier, make a small cross-shaped cut on the top of each tomato. Blanch them in boiling water with a pinch of salt for about 1 minute. Then, transfer to cold water and gently peel off the skin.

Let’s prepare the other vegetables. Get your potato, onion, carrot, and whole garlic cloves ready. You can also have your ketchup handy for convenience.

Peel one medium-sized potato and cut it into large cubes. This size will provide a nice texture in the stew.

Similarly, dice the onion into large pieces, similar in size to the potato cubes. This will make for a visually appealing and well-cooked stew.

Since it’s simmering on low heat, the bottom might stick. Occasionally lift the lid and stir gently with a spatula to ensure even cooking and prevent sticking.

When the liquid has reduced and the stew is slightly thickened, stir in 3 tablespoons of ketchup. Mix well to combine, adding a touch of sweet and tangy flavor. This ketchup will enhance the overall taste.
