Cooking Instructions
Step 1
First, rinse the rice and mixed grains thoroughly. Place them in your rice cooker. Add 1/2 Tbsp of soy sauce for soup and 2 Tbsp of curry powder, then mix well to distribute the seasonings evenly. (Tip: Soaking the mixed grains for at least 30 minutes beforehand can result in a softer texture.)
Step 2
The curry powder alone might not be enough to season the rice perfectly, especially since we aren’t preparing a separate dipping sauce. Adding soy sauce provides an extra layer of savory flavor and basic seasoning. You can also use salt instead of soy sauce if preferred.
Step 3
Measure the water to a 1:1 ratio with the rice and grains (1.5 cups). Top the rice cooker with the whole tomato (stem removed) and start the ‘cook’ cycle. The tomato will soften and infuse the rice with its natural sweetness and flavor as it cooks.
Step 4
Consider adding 1/2 Tbsp of olive oil along with the water when you start cooking the rice. This will help the rice grains become more fluffy and glossy. It’s an optional step, but highly recommended for better texture.
Step 5
Prepare the vegetables (zucchini, carrot, king oyster mushroom) by slicing them into bite-sized pieces. Heat a pan over medium-high heat and add the vegetables. Season lightly with salt and pepper. Once one side is golden brown, flip the vegetables and add a little cooking oil or olive oil. Continue to cook until all sides are tender and nicely grilled. The natural sweetness of the vegetables will be enhanced through grilling.
Step 6
Pat the beef dry with paper towels to remove any excess moisture. Season it with salt, pepper, and a little olive oil. Let it marinate for at least 10 minutes to tenderize the meat and infuse it with flavor.
Step 7
Sear the marinated beef over high heat in a hot pan. Place the beef in the pan and cook quickly on each side until nicely browned, ensuring the juices are sealed inside. Avoid overcooking, as this can make the beef tough.
Step 8
Once the tomato curry rice is cooked, scoop it into a serving bowl, presenting it attractively.
Step 9
Finally, arrange the beautifully grilled vegetables and the juicy, seared beef on top of the curry rice. This completes your nutritious and delicious meal of Tomato Curry Rice with Grilled Beef and Vegetables, offering a satisfying and wholesome dining experience.
