- 1 can (approx. 200g) Spam
- 1/4 onion
- 2 eggs
- Mayonnaise, as needed
- Pickled radish (danmuji), finely chopped
- 1 slice of processed cheddar cheese
Spicy Stir-fried Kimchi- 1 handful of well-fermented kimchi (approx. 100g)
- 1/2 tsp sugar (adjust to taste)
- 1 tsp perilla oil
- Black pepper, to taste
- Sesame seeds, to taste
Sweet & Savory Spam Mayo Sauce- 3 Tbsp soy sauce
- 6 Tbsp water
- Black pepper, to taste
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp corn syrup (or oligosaccharide)
- 1 handful of well-fermented kimchi (approx. 100g)

Cooking Instructions
Step 1
First, let’s prepare the stir-fried kimchi, a key ingredient for our rice burgers. For one burger, a handful of kimchi is usually enough, but I’m making a larger batch to have as a side dish later! Feel free to adjust the quantity to your needs.

Finely chop the kimchi after rinsing and draining it. Heat perilla oil in a pan over low heat and stir-fry the kimchi until it softens and releases a sweet aroma. Once the kimchi has wilted, add a little sugar, black pepper, and sesame seeds to your preference, and stir-fry for just a bit longer. This is how you easily make delicious stir-fried kimchi!
Step 3
Next, let’s prepare the Spam, which adds richness to our rice burgers. I’m using a small 200g can, but it’s a bit too much for two burgers; about 150g would be sufficient for two different types of burgers. Since we’re making both Kimchi Spam Rice Burgers and Spam Mayo Rice Burgers, I’ll cut the Spam accordingly. For the Kimchi Rice Burger, dice it into thick, bite-sized cubes (about 1.5 cm). For the Spam Mayo Rice Burger, slice it thinly (about 0.5 cm) to maintain its shape.

Finely mince the onion for the Spam Mayo Rice Burger to a size similar to the Spam slices. Adding onion helps cut through the richness and adds texture. If you don’t have onion, you can omit it.

Here’s a pro tip for shaping your rice burgers beautifully! Use a bowl that’s the size you want your rice burger to be. I’m using a standard rice bowl. Line the inside of the bowl with plastic wrap; this makes it easy to unmold the burger later without it falling apart. Start by pressing a thin layer of seasoned rice into the bottom. Then, layer generously with the prepared Spam (glazed), a slice of cheddar cheese, the stir-fried kimchi, and finally the sunny-side-up egg. Press down firmly after adding each layer to compact the ingredients.

Next, gather the edges of the plastic wrap in the center to cover the rice, sealing it. Carefully invert the bowl onto a plate, and voilà! Your perfectly round and neat Kimchi Spam Rice Burger is ready to be revealed.
