This zucchini and tofu soybean paste stew is a comforting and delicious meal that’s loved by everyone, from kids to adults. Ingredients- 1.7L Anchovy Broth
- 300g Zucchini (or Similar Leafy Green like Swiss Chard)
- 1/2 block Tofu
- 1/2 stalk Scallion
Seasoning- 2 Tbsp Doenjang (Korean Soybean Paste)
- 1/2 Tbsp Gochugaru (Korean Chili Flakes)
- 2/3 Tbsp Minced Garlic
- 2 Tbsp Doenjang (Korean Soybean Paste)
- 1/2 Tbsp Gochugaru (Korean Chili Flakes)
- 2/3 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, prepare all your main ingredients: the zucchini (or similar green), tofu, and scallions.
Step 2
Wash the zucchini thoroughly under running water. Then, cut it into bite-sized pieces, about 3-4 cm long. Cutting them to a manageable size will help the flavors infuse better into the broth.
Step 3
Dice the tofu into approximately 1.5 cm cubes. Cubing the tofu ensures it holds its shape well during cooking and doesn’t break apart easily.
Step 4
Finely chop the scallions. The fresh aroma of scallions will add a wonderful depth to the stew.
Step 5
Pour the pre-made anchovy broth (or seafood broth) into a pot and stir in 2 tablespoons of doenjang until dissolved. Keep in mind that the saltiness of doenjang can vary by brand, so it’s best to add it gradually and taste as you go to achieve your desired seasoning.

Once the broth begins to boil, add the prepared zucchini to the pot. Simmering the zucchini will release its natural sweetness into the stew.

Next, add 1/2 tablespoon of gochugaru (Korean chili flakes). This will give the stew a pleasant hint of spice, a vibrant color, and help to balance any slight gaminess from the greens.

Check if the zucchini is tender. When it is, stir in 2/3 tablespoon of minced garlic. Adding garlic later in the cooking process helps preserve its fragrant aroma.

When the zucchini is almost fully cooked, add the diced tofu and chopped scallions. Let it simmer for just a short while longer to finish. Gently stir to avoid breaking the tofu. (For a spicier kick, you can add some chopped Korean green chili peppers at this stage.)
