Quick & Delicious Kimchi Fried Rice with Smoked Pork Belly
After a fulfilling lunch with my in-laws, I returned home to find it was already 1:30 PM. The house was still as I left it, so I spent the next hour ventilating, vacuuming, and doing the dishes. Then, I decided to cook and plate a dish for the blog, which took another two hours. Seeing how much a little extra care in photography could change the final result made me feel proud, but it left me without a dish to post for today. While pondering what to make, a conversation about kimchi fried rice in a chat group sparked an idea, and I quickly whipped up this dish.
Main Ingredients- Smoked pork belly
- Kimchi (moderately fermented, slightly sour)
- Cooked rice
- Eggs
- Scallions (for garnish)
Cooking Instructions
Step 1
Finely chop the smoked pork belly into bite-sized pieces (about 1cm thick). Heat a pan over medium heat, then add the chopped pork belly and stir-fry until it releases its fat. The smoked pork belly is quite fatty, so you won’t need much additional oil. Once the pork belly is browned and slightly crispy, set it aside on a separate plate.
Step 2
In the same pan used for the pork belly, add finely chopped kimchi and stir-fry together. Cook until the kimchi softens and the raw smell disappears. Considering the saltiness of the smoked pork belly, add only about half a tablespoon of gochujang to enhance the kimchi’s sourness. If the mixture becomes too dry after adding gochujang, add a tiny bit more cooking oil to moisten it.
Step 3
Add half a bowl of cooked rice (or about 1.5 bowls, adjust to your preference) to the pan. Stir-fry thoroughly, ensuring the kimchi and pork belly seasoning coats every grain of rice. The fried rice will appear richer and more appetizing as you mix and cook it.
Step 4
Once the rice is well-fried, sprinkle toasted sesame seeds just before turning off the heat for added nutty flavor. Since the smoked pork belly provides ample flavor, intentionally omitting sesame oil helps balance the richness. While delicious on its own, topping it with a sunny-side-up egg makes it even more satisfying.
Step 5
Prepare a sunny-side-up egg to complete the fried rice. Lightly grease a pan and crack an egg into it, cooking it until the yolk is still runny. Be careful not to break the yolk while cooking. Carefully plate the prepared fried rice and gently place the cooked sunny-side-up egg on top. Finally, garnish with chopped scallions for a fresh, vibrant finish.
