Main Ingredients

  • 400g frozen seafood mix (shrimp, squid, clams, etc.)
  • 300g firm tofu, cut into 1-inch cubes
  • 150g Korean radish (mu), thinly sliced
  • 1/2 stalk of green onion (scallion), diagonally sliced
  • 1 red chili pepper, diagonally sliced
  • 1 green chili pepper, diagonally sliced
  • 100g sujebi dough or pre-made sujebi flakes (Korean hand-pulled dough)

Seasoning & Broth

  • 3 Tbsp Doenjang (Korean fermented soybean paste)
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp gochugaru (Korean chili powder, fine grind)
  • 1 liter rice water (water used to rinse rice)
  • 2 pcs broth packs or bouillon cubes (anchovy-kelp broth recommended)

Cooking Instructions

Step 1

Begin by thawing the frozen seafood mix in cold water. While the seafood thaws, you can prepare the other ingredients to save time.

Step 1

Step 2

Pour 1 liter of rice water into a ttukbaegi (Korean earthenware pot) or a regular pot. Add the broth packs or bouillon cubes to start creating a flavorful broth. Using homemade anchovy-kelp broth will add even more depth.

Step 2

Step 3

Once the broth begins to simmer, place the 3 Tbsp of doenjang into a fine-mesh sieve and gradually whisk it into the broth. This helps to dissolve the paste smoothly, preventing clumps and ensuring a silky texture.

Step 3

Step 4

Add 1/2 Tbsp of minced garlic to enhance the savory notes of the doenjang.

Step 4

Step 5

Stir in 1/2 Tbsp of fine-grind gochugaru for a touch of spiciness and a vibrant color. Feel free to adjust the amount based on your spice preference.

Step 5

Step 6

Once the doenjang seasoning is well combined, drain the thawed seafood, discarding the thawing water, and add it to the simmering broth. Let it simmer until the doenjang broth comes to a rolling boil.

Step 6

Step 7

While the broth is simmering, prepare all the vegetables and tofu. Slice the Korean radish thinly, diagonally slice the green onions and chili peppers, and cube the tofu into bite-sized pieces.

Step 7

Step 8

Drain the seafood thoroughly after thawing. Excess water can dilute the flavor.

Step 8

Step 9

When the doenjang broth is bubbling vigorously, add the 100g of sujebi dough or pre-made sujebi flakes and cook until they float to the surface.

Step 9

Step 10

Add the 150g of sliced Korean radish and simmer until it becomes translucent. The radish will impart a refreshing sweetness to the soup.

Step 10

Step 11

Gently add the 300g of cubed tofu and simmer for another minute or two. Be careful not to stir too vigorously to prevent the tofu from breaking apart.

Step 11

Step 12

Once the soup returns to a boil, add the 400g of drained seafood mix. Cook for about 3-5 minutes more, or until the seafood is fully cooked. Avoid overcooking the seafood as it can become tough.

Step 12

Step 13

Add the diagonally sliced red chili pepper for a pop of color and mild heat.

Step 13

Step 14

Toss in the diagonally sliced green chili pepper for a bit more spiciness. If you enjoy a spicier stew, you can add more.

Step 14

Step 15

Finally, add the diagonally sliced half stalk of green onion and simmer for just another moment to finish. Your delicious Seafood Doenjang Jjigae is ready!

Step 15

Step 16

See? You’ve made a fantastic Seafood Doenjang Jjigae with such ease! It’s perfect for busy mornings or a comforting weeknight dinner.

Step 16

Step 17

The natural umami from the seafood beautifully balances the robust flavor of the doenjang, resulting in a clean, refreshing, yet deeply satisfying broth. You’ll find yourself reaching for extra rice!

Step 17

Step 18

Summary: Enjoy this exquisite Seafood Doenjang Jjigae, a perfect harmony of fresh seafood and savory doenjang!
