A Satisfying One-Bowl Meal Made with Seasonal Potatoes: Kid-Pleasing Potato Fried Rice
With potatoes abundant this season, after making potato stew, I decided to whip up some delicious potato fried rice for the next day. Fried rice is a mom’s favorite, isn’t it? No side dishes needed, and less washing up! This potato fried rice was made with potatoes our little ones picked themselves. Kids especially love it when you add a drizzle of ketchup.
Key Ingredients- 1 medium potato
- 1/4 small carrot
- 1 red bell pepper or mild chili pepper
- 1 egg
- 1.5 cups cooked rice (warm, serves 2 children)
- 1/2 tsp salt
- Pinch of black pepper
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, let’s get our fresh ingredients ready for the fried rice. Although the picture shows more carrot, I only used 1/4 of it in reality. This recipe makes a generous portion for one adult, or two children.

Wash and peel one medium-sized potato. Then, finely julienne it into thin strips, and chop them into small pieces. This preparation will give the fried rice a pleasant texture.
Step 3
Place the finely chopped potatoes in a bowl of cold water and let them soak for about 5 minutes. This step removes excess starch, ensuring your fried rice will be fluffy and not sticky.
Step 4
Finely chop 1/4 carrot into pieces similar in size to the potatoes. The colorful addition will make the fried rice look even more appetizing.

Remove the seeds from one pepper and finely chop it. Since this is for children, I recommend using a mild pepper or a young chili pepper that adds flavor without much heat. If you enjoy a bit of spice, you can use a hotter chili pepper.

Prepare about 1.5 cups of warm cooked rice. For the best fried rice texture, it’s ideal to use freshly cooked, warm rice.

Heat about 2 tablespoons of cooking oil in a frying pan over medium heat. Add the chopped potatoes and carrots first and stir-fry them. Continue to cook until the potatoes begin to look slightly translucent.

Once the potatoes start to cook, season with 1/2 teaspoon of salt and a pinch of black pepper, and continue stir-frying. This step seasons the potatoes well, contributing to the overall flavor of the fried rice.

Continue to cook for about 5 more minutes, or until the potatoes are tender. It’s important not to overcook them until they are mushy.

Now, it’s time to cook the other ingredients for the fried rice. Gently push the cooked potatoes and carrots to one side of the pan to create space.

Pour the beaten egg into the empty space. Use chopsticks or a spatula to stir and scramble the egg until it’s cooked through and fluffy.

As the egg starts to set, gently mix it with the potatoes and carrots. Then, pour 2 tablespoons of soy sauce along the edge of the hot pan. This creates a delicious caramelized ‘wok hei’ or smoky flavor as it sears.

Finally, add the chopped pepper and stir-fry everything together well. The aroma of the pepper will enhance the overall flavor of the fried rice.

Once all the ingredients are cooked, add the warm rice to the pan. Use a spatula to gently break up the rice and mix everything evenly, ensuring each grain is coated with the seasonings. Stir-fry thoroughly so the flavors meld together.

For the final touch, sprinkle with sesame seeds and drizzle 1 tablespoon of sesame oil for a nice sheen and nutty aroma. Taste it and if it needs a little more salt, add just a tiny pinch.
