Rich & Flavorful Pork Rib Kimchi Stew

  • 6 Pork ribs
  • 1/8 head of well-fermented Kimchi (about 200g)
  • 2 cups Water (400ml)
  • 1/2 stalk Green onion, chopped

Delicate Steamed Croaker

  • 1 prepared Croaker fish (about 300g)
  • 1/4 Cucumber, julienned
  • A little Bell pepper (e.g., red, yellow), julienned

Crisp & Aromatic Ssam Salad

  • 1 handful Lettuce, washed
  • 1 Tbsp Anchovy sauce
  • 1/2 Tbsp Sesame oil
  • A pinch of toasted sesame seeds
  • A little Minced garlic

Sweet & Satisfying Corn Rice

  • Rice for 2 servings
  • About 2 handfuls of Corn kernels

Cooking Instructions

Step 1

Rinse the pork ribs in cold water for about 10 minutes to remove any blood. Then, blanch them in boiling water for 2-3 minutes. This step helps remove any gamey odor and results in a clearer broth. After blanching, rinse the ribs thoroughly under cold running water.

In a pot, combine the prepared pork ribs and the kimchi, cut into bite-sized pieces. Sauté over medium heat until the kimchi becomes slightly translucent and blends with the ribs. Then, pour in 2 cups of water. Adjust the amount of water based on the saltiness of your kimchi.

Simmer the stew until the kimchi and pork ribs are tender and the broth has reduced slightly. Finally, add the chopped green onions and let it simmer for another moment. Your delicious Pork Rib Kimchi Stew is ready! You can also add a pinch of black pepper for extra flavor.

Wash the lettuce leaves thoroughly under running water and gently pat them dry. Cut them into bite-sized pieces (about 2-3 cm). Briefly blanch the lettuce in water with a tiny pinch of coarse salt to retain its crispness. Rinse the blanched lettuce under cold water and gently squeeze out excess water.

In a bowl, combine the blanched and squeezed lettuce. Add minced garlic, anchovy sauce, sesame oil, and toasted sesame seeds. Gently toss the ingredients with your hands until evenly coated. Be careful not to overmix, as this can make the lettuce mushy.

Add rice to your rice cooker as you normally would. Pour in water according to your usual measurement for 2 servings. Ensure the water level is standard, as too much or too little water can affect the rice texture.
