Main Ingredients
  • 200g pork belly
  • 1 handful cabbage (shredded)
  • 1/5 onion (shredded)
  • 100g firm tofu (cut into bite-sized pieces)
  • 4 Korean green chili peppers (halved lengthwise)
  • 1 piece green onion (cut into long pieces)
  • 2 Tbsp all-purpose flour
  • 1 egg
  • 1 bowl cooked rice

Seasoning
  • 3 Tbsp Ssamjang (Korean soybean paste)
  • 1 Tbsp sesame oil
  • Pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, prepare all the ingredients for the dish: the pork belly, shredded cabbage and onion, bite-sized tofu, cooked rice, and the seasoning ingredients, ssamjang and sesame oil. Having all your ingredients prepped makes the cooking process much smoother.

Step 2

Cut the pork belly into bite-sized pieces, suitable for fried rice. Cutting them too large might increase cooking time, so aim for pieces that are easy to eat in one bite.

Step 3

Add 2 tablespoons of ssamjang to the cut pork belly and mix well. Gently massaging the ssamjang into the pork belly will infuse it with a deeper flavor.

Step 4

Heat a generous amount of cooking oil (such as soybean oil) in a pan. Once heated, sprinkle 2 tablespoons of all-purpose flour over the seasoned pork belly and lightly mix. Lightly coating the pork belly with flour will help it become crispier when fried.

Step 5

Add the flour-coated pork belly to the hot, oiled pan. Spread it out evenly and fry until it becomes golden brown and sizzles. Cook the pork belly thoroughly until it achieves a nice golden color on all sides.

Step 6

Reduce the heat to medium to prevent the pork belly from burning. Continue to cook until it’s nicely browned on all sides. This step develops the rich, savory flavor of the pork belly.

Step 7

Once the pork belly is cooked, add the pre-shredded cabbage and onion, along with the tofu pieces, to the pan and stir-fry. Cook until the vegetables soften slightly.

Step 8

Add the halved Korean green chili peppers at this stage and continue to stir-fry. The mild spiciness of the chili peppers helps to cut through the richness of the pork belly, balancing the overall flavor.

Step 9

Lightly sprinkle flour again over the vegetables in the pan. Add the remaining 1 tablespoon of ssamjang to season the vegetables and other ingredients, stirring everything together to ensure even distribution of the seasoning.

After stir-frying until all ingredients are well combined, add the long-cut green onions and cook for another minute to enhance the aroma.

Finally, crack 1 egg into the pan and add the bowl of cooked rice. Stir-fry everything together, ensuring the rice is not clumped and is evenly mixed with the other ingredients. The egg acts as a coating for the rice grains, contributing to a fluffier texture.

Step 12
