Don’t let that aged kimchi from the back of your fridge go to waste! This recipe transforms it into a deeply satisfying Pork Kimchi Stew, packed with tender pork and simmered to perfection. It’s a truly comforting and delicious meal that will become a fast favorite.
Main Ingredients- 3 heads of well-fermented kimchi
- 2kg pork (shoulder or belly recommended)
- 2 stalks of green onion
Seasoning & Additional Ingredients- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 1 liter water
- 4 beef bouillon cubes (or anchovy-fish stock, or plain water)

Cooking Instructions
Step 1
In a large, deep pot, layer 2 heads of kimchi flat on the bottom. Arrange the 2kg of pork evenly over the kimchi. Then, cover the pork with the remaining 1 head of kimchi.
Step 2
Continue layering the ingredients, ensuring the pork is fully covered by kimchi. If you have extra pork, place it on top of the last layer of kimchi. (Think of it as alternating layers: kimchi, pork, kimchi, pork).
Step 3
Scatter the 4 bouillon cubes (beef or pork flavor) over the ingredients. Sprinkle in 2 Tbsp of sugar and 3 Tbsp of gochugaru. Bring the stew to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 1 hour and 30 minutes. If the liquid reduces too much during cooking, add a little more water as needed.
Step 4
After 1 hour and 30 minutes, check for doneness. The pork should be tender enough to shred easily with tongs, and the kimchi should be very soft. Finally, add the 2 stalks of green onion, sliced diagonally, and simmer for a few more minutes until the stew is fragrant. Your delicious Pork Kimchi Stew is ready to be enjoyed!
