  • Anchovy-Kelp Broth 600ml
  • Kimchi Dumplings 8 pieces
  • Eggs 2 large
  • Soup Soy Sauce 1 Tbsp
  • Green Onion 1 handful (chopped)
  • Ground Perilla Seeds 2-3 Tbsp
  • Salt to taste

Cooking Instructions

Step 1

First, prepare 600ml of savory anchovy and kelp broth. (This recipe makes 2 servings.) For a quicker preparation, you can use instant broth tablets or liquid broth concentrates.

Step 2

Once the broth comes to a rolling boil, carefully add 8 kimchi dumplings. Using spicy kimchi dumplings instead of regular meat dumplings adds a wonderful contrast to the nutty perilla seeds, making the soup even more flavorful.

Step 3

When the dumplings float to the surface, add 1 Tbsp of soup soy sauce to season. This helps to season the dumplings from the inside out as they cook.

Step 4

In a separate bowl, lightly beat 2 eggs. You don’t need to whisk them perfectly smooth; just break up the yolks and whites.

Step 5

Slowly drizzle the beaten eggs in a circular motion into the boiling soup. Avoid stirring immediately after adding the egg. Wait until you see the egg starting to set and form wisps, then gently stir from the bottom to distribute the cooked egg strands. This prevents the soup from becoming cloudy.

Step 6

Add about one handful of finely chopped green onions to the soup.

Finally, stir in 2-3 Tbsp of ground perilla seeds. The soup might seem thin at first, but the perilla seeds will thicken it as they hydrate. Be careful not to add too much, or it can become overly thick. Taste the soup and adjust the seasoning with a little salt if needed.
