Made with simple ingredients, it highlights the natural sweetness of the cabbage, making it a comforting and healing dish on a chilly day.

Broth Base

  • 2 packs dried anchovies for broth
  • 3-4 sachets of Dasida (or kelp, dried pollack head, radish etc. for broth)

Main Ingredients & Seasoning

  • 1 head Napa cabbage (focus on the inner leaves and core)
  • 1 stalk green onion (sliced diagonally)
  • 1/2 onion (thinly sliced)
  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce for soup (or salt)
  • 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)

Cooking Instructions

Step 1

First, let’s prepare the broth for a clear and refreshing soup. In a pot, add plenty of water, 2 packs of dried anchovies for broth, and 3-4 sachets of Dasida. Bring to a simmer over medium heat with the lid off for about 15 minutes, then cover and continue to simmer on low heat for another 15 minutes to extract deep flavors. Once done, strain the broth through a sieve to remove solids.

Thoroughly wash the Napa cabbage. Trim off the tough core part of the cabbage and cut the leaves and stems into bite-sized pieces, about 3-4 cm. Add the prepared cabbage to the boiling broth and cook for about 10 minutes, or until the cabbage wilts and becomes tender. At this stage, season with 2 tablespoons of soy sauce for soup or salt. Using both soy sauce and salt can add a richer umami flavor.

Once the cabbage is partially cooked, add the diagonally sliced green onion, thinly sliced onion, and 1 tablespoon of minced garlic. These vegetables will enrich the soup’s flavor, adding a refreshing taste. Let it simmer a bit longer to allow the vegetables’ flavors to meld into the broth.

If you prefer a spicier kick, add 1 tablespoon of gochugaru (Korean chili flakes) at this point, according to your preference. Gochugaru will give the soup a beautiful color and a pleasant heat, making it even more delicious.
