I picked up a variety of fresh mushrooms from the supermarket. As I pondered what to make, I decided to combine the LA galbi I had frozen with these diverse mushrooms to create a delicious hot pot. I’m excited to share this recipe for a light yet flavorful hot pot broth.

Main Ingredients

  • 500g LA Galbi (Korean short ribs)
  • 5 leaves Napa cabbage leaves
  • 1/2 zucchini
  • 2 king oyster mushrooms
  • 2 shiitake mushrooms
  • 1 handful of enoki mushrooms
  • 300g enoki mushrooms

Hot Pot Broth Seasoning

  • 1 cheongyang chili pepper
  • 1 red chili pepper
  • 100ml soy sauce
  • 30ml mirin (or cooking wine)
  • 2 Tbsp minced garlic
  • 2 Tbsp sugar
  • 2 Tbsp oligosaccharide (or corn syrup)
  • Pinch of black pepper
  • 1 Tbsp sesame oil
  • 450ml water
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, let’s prepare the vegetables. Cut the Napa cabbage leaves into quarters. Slice the zucchini, king oyster mushrooms, and shiitake mushrooms into bite-sized pieces. For the enoki mushrooms, trim the ends and gently pull them apart into smaller strands. For the other enoki mushrooms (assuming this is a typo and refers to something else, or if it’s meant to be multiple types of enoki), prepare them similarly by separating them into manageable clusters. This preparation ensures you can enjoy the distinct texture of each mushroom.

Now, let’s make the flavorful broth. In a bowl, thinly slice the cheongyang and red chili peppers. Add soy sauce, mirin, minced garlic, sugar, oligosaccharide, black pepper, sesame oil, water, and toasted sesame seeds. Whisk everything together until well combined. This creates a savory and aromatic broth base.

Arrange the prepared vegetables and the LA galbi in a hot pot. If the LA galbi is frozen, make sure to thaw it beforehand for best results. (Refer to @6979180 for LA Galbi preparation tips).

Pour the prepared broth seasoning evenly over the ingredients in the hot pot. You can gently shake the pot to ensure the seasoning is distributed.

Now it’s time to cook. Bring the hot pot to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer until the LA galbi is fully cooked and the flavors have melded into the broth. Cooking the meat until tender is key.
