Ingredients- Mixed mushrooms 100g (e.g., shiitake, king oyster, enoki – use your favorites)
- Curry roux blocks 1.5-2 pieces (choose mild or spicy to your preference)
- Water 2 cups (approx. 400ml)
- Onion, a little
- Carrot, a little
Cooking Instructions
Step 1
First, thoroughly wash all your mushrooms and vegetables. For the mushrooms, ensure any soil is removed by rinsing them carefully. Pat them dry before proceeding.
Step 2
Prepare the ingredients by chopping them into bite-sized pieces. If you’re cooking for children, consider cutting the vegetables and mushrooms a bit smaller to make them easier to eat and less likely to be picked out. This also helps integrate them more seamlessly into the curry.
Step 3
Let’s begin cooking! Place a suitable pot on your induction cooktop and set it to high heat (I use level 9). Add 2 cups of water (approximately 400ml). You can adjust the amount of water later based on your desired curry consistency.
Step 4
Before the water comes to a rolling boil, gently add the chopped mushrooms, onion, and carrot to the pot. Also, add 1.5 to 2 blocks of curry roux. While it may seem like a lot of ingredients, the mushrooms will cook down considerably, making the portion size just right.
Step 5
Cook on high heat (level 9) for 7 minutes, stirring occasionally to prevent the curry from sticking to the bottom of the pot. After 7 minutes, reduce the heat to medium-low (around levels 2-3) and let it simmer for another 2 minutes to allow the flavors to meld beautifully.
