  • 1 bag Bean Sprouts (approx. 300-400g)
  • 2 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 1/2 Tbsp Minced Garlic (optional)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

2. Chewy Stir-fried Sweet Potato Stems with Anchovies

  • 150g Sweet Potato Stems
  • 50g Dried Anchovies (small)
  • 1 Red Chili Pepper
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 1/2 cup (100ml) Water
  • 2 Tbsp Cooking Oil (Corn Oil)
  • 1 Tbsp Toasted Sesame Seeds
  • 1 Tbsp Sesame Oil
  • Pinch of Coarse Salt (for blanching sweet potato stems)

  • 1 Oriental Melon (approx. 300g)
  • 100g Minced Abalone Meat (or shrimp meat)

  • 2 Tbsp Spicy Pepper Paste (Yanggochu-jang or Gochujang)

7. Hearty Spicy Beef Paste (Yanggochu-jang)

  • 300g Ground Beef
  • 1 Onion (medium-sized)
  • 2 Red Chili Peppers
  • 4 Cheongyang Peppers
  • 1 cup (approx. 200g) Gochujang (Red Pepper Paste)
  • 2 Tbsp Minced Garlic
  • 1/2 cup (100ml) Broth or Water
  • 2 Tbsp Sweet Rice Flour
  • 2 Tbsp Toasted Sesame Seeds
  • 2 Tbsp Sesame Oil
  • Pinch of Salt
  • Pinch of Black Pepper

Cooking Instructions

**1. Make Crispy Bean Sprouts Salad:**
Wash the fresh bean sprouts thoroughly under running water. Bring a pot of water to a boil and add the bean sprouts. Blanch for about 1 minute 30 seconds to 2 minutes; be careful not to overcook, as they should remain crisp. Immediately rinse the blanched sprouts in cold water to stop the cooking process and drain them well. Place the drained sprouts in a bowl. Add soy sauce for soup, minced garlic (optional), sesame oil, and toasted sesame seeds. Gently mix with your hands until well combined. Adjust seasoning to your taste. This completes the delicious bean sprouts salad.

**2. Make Chewy Stir-fried Sweet Potato Stems with Anchovies:**
Peel the sweet potato stems, wash them clean, and cut them into bite-sized pieces. In a pot, bring water with a pinch of coarse salt to a boil, and blanch the sweet potato stems for 2-3 minutes. Drain the blanched stems and rinse with cold water. In a separate bowl, marinate the stems with 1 Tbsp soy sauce for soup and 1 Tbsp minced garlic. Heat 2 Tbsp cooking oil in a pan over medium heat and stir-fry the marinated sweet potato stems. Once they begin to soften slightly, add the dried anchovies and stir-fry together. Be mindful of the heat to prevent the anchovies from burning. Finish by adding 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds for a glossy finish. Finely chopped red chili peppers can be added for color.

**3. Make Refreshing and Savory Stir-fried Oriental Melon:**
Peel the oriental melon, remove the seeds, and slice it into half-moons or desired bite-sized pieces. Heat 2 Tbsp cooking oil in a pan over medium heat. Add 1 Tbsp minced garlic and sauté until fragrant. Add the sliced oriental melon and stir-fry. When the melon starts to turn translucent, add 2 Tbsp soy sauce for soup and continue to stir-fry, seasoning it. When the oriental melon is about 70% cooked, add the minced abalone meat (or shrimp meat) and finely chopped red chili pepper, and stir-fry together. Once the abalone meat is cooked, turn off the heat and stir in 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds for a smooth finish.

**4. Make Tender Stir-fried Eggplant:**
Wash the eggplants, remove the stems, and slice them into 1.5 cm thick half-moons. Heat a little cooking oil in a pan. Add 1 Tbsp minced garlic and sauté until fragrant. Add the minced pork and stir-fry until browned. Once the pork is cooked, add the sliced eggplant and stir-fry together. When the eggplant begins to soften, add 3 Tbsp soy sauce for soup and 1/2 cup of broth (or water), and continue to stir-fry. When the eggplant is tender, add the chopped red chili pepper and a pinch of black pepper. Finally, stir in 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds for a glossy finish.

Wash the cucumbers thoroughly, rubbing with baking soda or coarse salt, then slice them thinly. Thinly slice the onion as well. In a bowl, combine the sliced cucumbers and onions. Prepare the seasoning by mixing 2 Tbsp fish sauce, 3 Tbsp red pepper flakes, 3 Tbsp vinegar, 3 Tbsp corn syrup (or honey), and 1 Tbsp minced garlic. Once the seasoning is well combined, add the cucumbers and onions to the bowl. Gently toss with your hands; avoid overmixing, which can make the cucumbers mushy. Sprinkle with toasted sesame seeds to finish this refreshing and tangy cucumber salad.

Wash the mackerel, remove the guts and fins, and cut into 2-3 bite-sized pieces. Remove the inner core from the aged kimchi and cut it into suitable pieces. Slice the onion and diagonally slice the red and Cheongyang peppers. In a pot, place the cut kimchi at the bottom, then arrange the prepared mackerel on top. Add 2 cups of water and 2 Tbsp spicy pepper paste (or gochujang), and bring to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and simmer for about 15-20 minutes, or until the mackerel is cooked through. When the sauce has reduced to your liking, add the sliced onion and peppers, and simmer for a little longer. This creates a flavorful and spicy braised mackerel with kimchi.

**7. Make Hearty Spicy Beef Paste (Yanggochu-jang):**
Season the ground beef with a pinch of salt and pepper. Finely mince the onion and chili peppers. Heat a little cooking oil in a pan. Add 2 Tbsp minced garlic and sauté until fragrant. Add the seasoned ground beef and stir-fry until browned. Once the beef is cooked, add the minced onion and chili peppers and stir-fry together. Continue stir-frying until the onion becomes translucent and all ingredients are cooked. Add 1 cup of gochujang, 1/2 cup of broth (or water), and 2 Tbsp sweet rice flour. Stir well to combine. Simmer over low heat, stirring constantly, until the sweet rice flour is cooked and the paste thickens. Season with salt if needed. This makes a delicious spicy beef paste, perfect for mixing with rice or using as a dipping sauce.
