Ingredients

  • 1 pack Udon noodles
  • 1 piece Curry roux block (approx. 100g)
  • 2 Shiitake mushrooms
  • 1/2 Onion
  • 100g Ground beef
  • 4 Meatballs
  • 20g Unsalted butter
  • 250mL Water
  • Pinch of Salt
  • Pinch of Black pepper
  • Cooking oil, as needed
  • 1 Egg

Cooking Instructions

Step 1

First, prepare all your ingredients. Thinly slice the shiitake mushrooms and onion. Prepare the remaining ingredients to your desired size. The ground beef is optional, so feel free to omit it if you don’t have any!

Step 1

Step 2

Heat a pan over medium to medium-low heat. Add the meatballs and roll them around gently to brown them on all sides. This helps develop their flavor.

Step 2

Step 3

You don’t need to cook the meatballs completely at this stage. Just sear them until they have an appetizing golden-brown color on the outside. This ensures they stay juicy and flavorful when simmered in the curry sauce later.

Step 3

Step 4

Now, let’s make the curry sauce. In an appropriate-sized pot, melt the unsalted butter over medium-low heat. The rich flavor of the butter will enhance the overall taste of the dish.

Step 4

Step 5

Once the butter is melted, add the sliced onion, a pinch of salt, and pepper. Sauté until the onion becomes translucent. Adding salt and pepper at this stage can help bring out the natural sweetness of the onions.

Step 5

Step 6

Sautéing the onions properly is key to a delicious curry! Cook them slowly and patiently until they are softened, fragrant, and slightly caramelized to a golden brown. This deepens their flavor and sweetness.

Step 6

Step 7

When the onions are nicely sautéed, add the ground beef and sliced shiitake mushrooms. Cook until the ground beef is fully cooked through. Stir until the beef loses its pink color and becomes crumbly.

Step 7

Step 8

Once the beef is cooked, pour in 250mL of water and bring it to a boil over high heat.

Step 8

Step 9

As soon as the water reaches a rolling boil, turn off the heat immediately. Add the curry roux block and stir well until it completely dissolves into the water, ensuring there are no lumps. Dissolving the curry off the heat prevents clumping and results in a smooth sauce.

Step 9

Step 10

After the curry is fully dissolved, add the partially seared meatballs to the pot. Reduce the heat to very low and let it simmer gently for 10 to 15 minutes. This allows the curry flavor to penetrate deeply into the meatballs.

Step 10

Step 11

Final step! Cook the udon noodles in boiling water according to the package directions. Gently separate the noodles as they cook to prevent sticking. Drain the noodles immediately after cooking; do not rinse them with cold water.

Step 11

Step 12

In a serving bowl, place the cooked udon noodles. Ladle the rich curry sauce and meatballs generously over the noodles. For an extra touch, you can top it with a perfectly soft-boiled egg (onsen tamago) in the center.

Step 12

Step 13

And there you have it! A hearty and delicious meatball curry udon. Enjoy your flavorful meal!
