Hearty Korean Style Suyuk (Boiled Pork Belly) Rice Bowl
A Satisfying Korean Suyuk Rice Bowl
Just as Japan has Char Siu Don and China has Dongpo Pork Rice Bowl, this recipe offers a unique Korean take on a delicious pork rice bowl! We’ve created a Korean-style ‘Suyuk Deopbap’ using tender boiled pork belly. It’s a fulfilling and flavorful meal that’s perfect for any occasion.
Main Ingredients
- Pork belly 250g
- Water parsley (minari) 50g
- Onion 1/8 medium
- Pickled radish wraps (mussam) 20g
- Cooked rice 1 bowl
- 1 can of beer (for boiling)
- 1 tsp salt (for boiling)
Special Soy Sauce Dressing
- Pickled chili peppers (gochujang-ajji) 3 pieces (finely chopped)
- Garlic 3 cloves (finely minced)
- 1.5 Tbsp vinegar
- 1 tsp sugar
- 1 tsp sesame oil
- 2 Tbsp pickled chili pepper brine
- Pickled chili peppers (gochujang-ajji) 3 pieces (finely chopped)

Cooking Instructions
Step 1
First, prepare all the ingredients for your rice bowl! Fresh ingredients are the foundation of a delicious meal.

Finely julienne the onion. The thinner the slices, the softer the texture and the less pungent the raw onion flavor will be.
Step 3
Soak the julienned onion in ice-cold water for about 10 minutes. This crucial step removes the sharp bite and strong smell of raw onion, allowing the other flavors of the dish to shine.
Step 4
Pour 1 can of beer into a pot and bring it to a boil. Once boiling, add 1 tsp of salt and the pork belly. Let it simmer for 30-40 minutes until tender. Boiling the pork belly in beer not only tenderizes it but also effectively removes any unwanted porky odors.

Finely mince the garlic. You can use a knife or a garlic press. Minced garlic will add a wonderful depth of flavor to your sauce.
Step 6
Wash the fresh water parsley (minari) thoroughly under running water. Cut it into pieces about 5cm long, roughly the width of two fingers. The aromatic quality of minari will elevate the overall flavor profile of your rice bowl.

To easily julienne the pickled radish wraps (mussam), try rolling them up before slicing. This makes it much more convenient to achieve thin strips.

The onion, minari, and julienned mussam you’ve prepared will be the fresh toppings for your rice bowl. They look as good as they’ll taste!

Now, let’s make the delicious soy sauce dressing! Combine the chopped pickled chili peppers, minced garlic, vinegar, sugar, sesame oil, and pickled chili pepper brine in a bowl. Whisk everything together until well combined. Ensure all ingredients are thoroughly mixed for a balanced flavor.

Arrange the cooked and sliced pork belly over a bowl of warm rice. Place the drained onion, minari, and julienned mussam alongside the pork. Drizzle generously with the special soy sauce dressing. Mix everything together thoroughly before enjoying!

Once the pork belly is cooked, let it cool slightly before slicing it thinly. Thin slices are ideal for a rice bowl, ensuring they blend well with the rice, sauce, and toppings.
