A Hearty Kongnamul Bulgogi the Whole Family Will Enjoy
My children tend to favor meat, so I often make Kongnamul Bulgogi to encourage them to eat more vegetables. While many recipes use thinly sliced pork belly, I prefer pork shoulder for its leaner cut. The combination of bean sprouts and perilla leaves adds a wonderfully savory flavor that even picky eaters will love. Don’t forget to mix the leftover sauce with rice – it’s absolutely delicious!
Main Ingredients- Pork Shoulder 600g (lean cut)
- Bean Sprouts 1 bag (approx. 300g)
- Carrot 1/4 pc (julienned)
- Green Onion 1/2 stalk (cut into large pieces)
- Onion 1/2 pc (julienned)
- Perilla Leaves 10 pcs (halved)
Seasoning Sauce- Soy Sauce 5 Tbsp
- Cooking Wine (Mirin) 2 Tbsp
- Minced Garlic 2 Tbsp
- Minced Ginger 1 Tbsp (or 1/2 tsp ginger powder)
- Sugar 2 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Sesame Seeds (for garnish) a pinch
- Soy Sauce 5 Tbsp
- Cooking Wine (Mirin) 2 Tbsp
- Minced Garlic 2 Tbsp
- Minced Ginger 1 Tbsp (or 1/2 tsp ginger powder)
- Sugar 2 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Sesame Seeds (for garnish) a pinch
Cooking Instructions
Step 1
First, prepare all your ingredients: the pork shoulder, bean sprouts, green onion, carrot, perilla leaves, and onion. It’s best to julienne the carrot and onion, cut the green onion into large sections, and halve the perilla leaves.
Step 2
Get a wide pan or pot with a lid. Start by layering the sliced onion at the bottom, followed by the bean sprouts, pork shoulder, and then the julienned carrots. Layering the ingredients helps the sauce distribute evenly for maximum flavor.
Step 3
Pour the prepared seasoning sauce evenly over the layered ingredients. Then, cover the pan with the lid and let it simmer over medium heat until the pork is mostly cooked. Try not to lift the lid during cooking, as this can release steam and affect the cooking time. Gentle, slow cooking is key here!
Step 4
Once the pork is more than halfway cooked, gently stir everything together with chopsticks or tongs. When the dish is almost done, add the prepared perilla leaves and stir-fry briefly. The goal is to wilt the perilla leaves slightly so their aroma is infused without overcooking them. Enjoy your delicious meal!
