Super Simple Kimchi Mandu Guk Recipe: Quick and Cozy Soup
Today, we’re making a wonderfully simple soup that brings warmth and flavor to your table. This comforting Kimchi Mandu Guk is perfect to have on hand when enjoying fried rice or bibimbap, and can be prepared in a flash on busy days. Let’s get started!
Ingredients- 5 Kimchi Mandu (Korean dumplings)
- 1 Anchovy and Kelp Broth Pack
- 1 Tbsp Korean Soup Soy Sauce (Gukganjang)
- 1 Teaspoon Salt (approx. 1/2 tsp)
- 1 Tbsp Tsuyu (Japanese soup base; substitute with 1 Tbsp more Gukganjang if unavailable)
- 500ml Water (approx. 2 cups)
- 1 Teaspoon Minced Garlic (approx. 1/2 tsp)
- 1 Egg
- 1/4 Green Onion (thinly sliced)
- 1/2 Korean Chili Pepper (seeds removed, thinly sliced)
Cooking Instructions
Step 1
You can use any type of mandu you prefer – kimchi or meat-filled! For this recipe, we’ll be using 5 kimchi dumplings. Have your dumplings ready.
Step 2
In a pot, combine 500ml of cold water and 1 anchovy and kelp broth pack. Let it steep for 10 minutes. After 10 minutes, remove the broth pack and bring the water to a boil.
Step 3
Once the broth is boiling vigorously, add 1 Tbsp of Korean soup soy sauce, 1 teaspoon of salt, and 1 Tbsp of Tsuyu to season. If you don’t have Tsuyu, you can add an extra tablespoon of Korean soup soy sauce for a similar savory depth. (Tip: Adjust seasoning to your taste.)
Step 4
Add the 5 kimchi dumplings to the pot and stir in 1 teaspoon of minced garlic to enhance the flavor. Let the dumplings cook.
Step 5
While the dumplings are cooking, prepare the garnishes. Thinly slice the green onion and Korean chili pepper. Whisk the egg in a small bowl to create an egg wash.
Step 6
When the dumplings are almost fully cooked, slowly drizzle the whisked egg into the simmering soup, pouring in a circular motion. Once the egg is cooked and forms ribbons, skim off any foam that rises to the surface to keep the broth clear.
Step 7
Finally, add the sliced green onions and chili peppers as a garnish. Let it simmer for another moment, then turn off the heat. You’ve just made a delicious and incredibly easy Kimchi Mandu Guk! Enjoy your meal.
