Today, let’s make a hearty and delicious Jajangbap at home for dinner! I used to avoid Jajangmyeon due to a past unpleasant memory, but nowadays, just seeing it makes my mouth water. While there’s a traditional method of stir-frying black bean paste, we have convenient instant powder mixes available. You can create a sauce similar to curry using whatever vegetables or seafood you have on hand. Here’s how to make it!

Ingredients

  • 1 Onion (medium)
  • 1 Potato (medium)
  • 70g Cabbage
  • 70g Carrot
  • 160g Pork (minced or diced)
  • 70g Squid
  • 100g Shrimp (peeled)
  • 1/2 stalk Green Onion
  • 1 pack Instant Jajang powder mix

Cooking Instructions

Take out the ingredients from your refrigerator and freezer. Preparing seafood like squid and shrimp along with pork will make the dish even richer. Feel free to adjust or omit the seafood based on your preference.

Chop the vegetables like onion, potato, cabbage, and carrot into bite-sized pieces or your desired size. If you chop the potatoes too small, they might break down while boiling, so aim for a moderate size.

Finely chop the green onion to prepare for making green onion oil. You can also separate the white and green parts for different uses.

Dice the pork into approximately 1-1.5cm cubes. Marinate with a little bit of ginger (minced or sliced), salt, and pepper. Letting it sit for about 10 minutes is recommended.

Season the prepared shrimp with 1/2 tablespoon of sesame oil and a pinch of pepper. Cut the squid into manageable pieces and place them together with the shrimp in a separate bowl. Seafood can become tough if overcooked, so we’ll only sauté it briefly at the end. This helps maintain its tender texture.

All the ingredients – vegetables, seafood, and marinated pork – are now prepped. It’s time to start cooking!

Heat a generous amount of cooking oil in a deep pan. Add the chopped green onions and sauté over medium-low heat until fragrant, being careful not to burn them, to create green onion oil. Once the aroma is released, add the marinated pork and stir-fry it until the surface turns golden brown, as if deep-frying. When the pork is cooked, add the marinated squid and shrimp and sauté just until they change color. Remove the sautéed seafood to a separate plate to add later. This step ensures the seafood remains tender.

In the same pan where the pork was cooked, add the chopped vegetables in order. First, add and stir-fry the potatoes. Once the potatoes are coated with oil, add the carrots, onions, and cabbage and continue to stir-fry. Cook until the vegetables are slightly softened. Pour 400ml of water into the pan with the cooked pork and vegetables. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes until the ingredients are tender.

Once all ingredients are cooked, add the instant jajang powder mix and stir well to dissolve any clumps. If the sauce becomes too thick, gradually add a little more water while stirring until you reach your desired consistency. Finally, add the reserved sautéed squid and shrimp and stir briefly to combine. Your Jajang sauce is ready!

Spoon the finished Jajang sauce generously over a bowl of hot rice. You can add shredded cucumber or a fried egg on top for extra flavor, according to your preference.
