Cooking Instructions

Step 1

Prepare 500g of pork shoulder, cut into stew meat size. Half of this will be used for kimchi jjigae, and the remaining half for the fajitas. Slice one onion and add it to the pork, ready for marination.

Step 1

Step 2

Now, let’s season the pork and onions. Add 3 tablespoons of teriyaki sauce for sweetness and smoky notes, 1 tablespoon of cumin sauce for depth of flavor, and 1 tablespoon of minced garlic. For aromatic complexity, include 1 teaspoon each of smoked paprika powder, cayenne pepper for a touch of heat, basil powder, and rosemary powder to tenderize and enhance the pork’s aroma. Finish with 1 teaspoon of freshly ground black pepper.

Step 2

Step 3

Gently mix all the seasonings into the pork and onions with your hands. Drizzle in 3 tablespoons of olive oil and mix once more to ensure everything is evenly coated. Cover the marinated pork and refrigerate for at least 30 minutes to 2 hours. This resting time allows the flavors to meld beautifully into the meat.

Step 3

Step 4

Next, prepare the shrimp. We’re using pre-cooked cocktail shrimp and will lightly season and sauté them. In a bowl, combine 20 cocktail shrimp with about 1 tablespoon of ramen seasoning packet and 2 tablespoons of olive oil. Toss gently to coat.

Step 4

Step 5

Heat a pan over high heat. Without adding extra oil, quickly stir-fry the seasoned shrimp for about 1 minute. Since the shrimp are already cooked, this step is just to warm them through and lightly coat them with the seasoning. Be careful not to overcook, as they can become tough.

Step 5

Step 6

Your lightly sautéed shrimp are ready! Set them aside in a separate bowl.

Step 6

Step 7

Now, cook the marinated pork. Heat a pan over medium-high heat with 3 tablespoons of olive oil. Add the marinated pork and stir-fry. If any pieces are too large, cut them into bite-sized portions as they cook. Stir-fry until the pork is well-cooked and nicely browned, taking care not to burn the sauce.

Step 7

Step 8

The pork stir-fry is complete, boasting a delicious aroma of teriyaki sauce. Transfer it to a serving dish.

Step 8

Step 9

Instead of tortillas, we’ll use garlic butter naan for our fajitas. Heat a skillet over medium heat and warm the naan for about 30 seconds per side, just until soft and pliable. For an even softer texture, you can warm them briefly in the microwave.

Step 9

Step 10

Prepare your dipping sauces. Sour cream sauce is a classic choice. For a tangy kick, mix soy sauce with a bit of mustard to create a mustard sauce. For a nutty flavor, combine peanut butter with honey and soy sauce to make a peanut sauce. Feel free to choose your favorite sauces or offer a selection!

Step 10

Step 11

Assemble your fajita fillings with fresh ingredients. Shredded cabbage, colorful bell peppers, sweet pineapple slices, and thinly sliced perilla leaves (or other fresh greens) add a refreshing crunch. Using leftover vegetables from spring rolls is a great way to reduce waste.

Step 11

Step 12

Arrange the cooked pork stir-fry and shrimp stir-fry attractively on your serving platter alongside the fresh vegetables.

Step 12

Step 13

Finally, place the warmed garlic butter naan on the platter. A generous presentation enhances the dining experience. You can serve the naan whole or cut them into halves or quarters for easier handling. To enjoy, spoon some pork and shrimp stir-fry, add fresh vegetables and pineapple, drizzle with your favorite sauce, and wrap it all up in the warm naan. Enjoy customizing your fajitas with your preferred sauce combinations!
