Main Ingredients- 4 large eggs
- 4 frankfurter sausages
Cooking Instructions
Step 1
First, wash and prepare all your ingredients. Thinly julienne the carrot and cabbage, and finely chop the green onion. Slice the frankfurter sausages into bite-sized pieces.

Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the julienned carrots and sauté for about 1 minute, bringing out their natural sweetness and softening them.

Add the chopped green onions to the pan and sauté with the carrots for another minute until fragrant. This will add a wonderful aroma and depth of flavor.

Add a little more vegetable oil to the pan and toss in the julienned cabbage. Sauté for 1-2 minutes until the cabbage is slightly wilted but still retains a slight crispness. We want to keep some texture!

Add the sliced frankfurter sausages to the pan and stir-fry everything together with the vegetables for about 1 minute until the sausages are lightly browned and flavorful.

In a bowl, crack the 4 eggs and whisk them well, removing any stringy bits. (You can add a pinch of salt and pepper to taste if you like). Heat a generous amount of vegetable oil in the pan. Pour the whisked egg mixture evenly into the pan to form a thin layer. Then, carefully arrange the sautéed vegetables and sausages over one half of the egg pancake.
Step 7
Once the bottom of the egg starts to set and cook, gently flip it using chopsticks or a spatula and fold it in half over the filling. Cook for another 1-2 minutes over low heat until the inside is fully cooked. Folding it this way keeps the filling neatly enclosed and gives it a beautiful shape.

If you’re serving with tortillas, you can place the cooked egg pancake on a warmed tortilla, fold it in half like a taco, and enjoy. This makes for a wonderfully substantial meal.
