Beat the chill with this piping hot and comforting Korean dumpling soup featuring dried radish greens! It’s a delightful two-in-one dish where you can savor both the rich broth and the flavorful dumplings. Perfect for a satisfying and nourishing meal.
Main Ingredients- 1 block thawed dried radish greens (approx. 200g)
- 1 handful dried pollack (approx. 20g)
- 7 kimchi dumplings
- 4 cups water (800ml)
- 1 slice daikon radish (thumb-sized)
Seasoning & Others- 1 Tbsp minced garlic
- 1 Tbsp doenjang (Korean soybean paste)
- 1/2 Tbsp sesame oil
- 1/2 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
First, thaw the frozen dried radish greens. You can soak them in cold water or use the defrost function on your microwave for quicker thawing.
Step 2
Once thawed, cut the dried radish greens into bite-sized pieces (about 2-3 cm long). In a pot, combine the cut radish greens, thinly julienned daikon radish, 1 Tbsp of minced garlic, and 1 Tbsp of doenjang. Gently mix with your hands to help the seasoning penetrate the ingredients, and let it marinate for about 10 minutes. This step enhances the umami flavor.
Step 3
Rinse the dried pollack lightly under running water to remove any dust. Then, use scissors to cut it into 2-3 cm lengths. This helps to infuse the broth with the pollack’s savory flavor and makes it easier to eat.
Step 4
Place the marinated radish greens in a pot over medium-low heat. Add 1/2 Tbsp of sesame oil and stir-fry for 2-3 minutes until fragrant. Sautéing removes any raw taste from the greens and adds a nuttier depth. Then, pour in 4 cups (800ml) of water and bring to a boil.
Step 5
Once the water is boiling, add the 7 kimchi dumplings. Increase the heat to high and let it boil vigorously. Stir gently to prevent the dumplings from sticking together.

When the soup is rapidly boiling, reduce the heat to medium. Stir in 1/2 Tbsp of gochugaru and mix well. Cover the pot and continue to simmer for another 5-7 minutes, allowing all the flavors to meld together. Cook until the dumplings are fully cooked and the broth has developed a rich taste.
