Main Ingredients

  • 4 pieces of chicken (your preferred cuts like thighs or breast)
  • 1 pack of ramen noodles
  • 1/4 head of cabbage
  • 1/4 carrot
  • 2/3 stalk of green onion
  • 150-200g tteokguk tteok (rice cake slices for soup, adjust to taste)

Seasoning & Others

  • 1 packet of ramen seasoning powder
  • 1.5-2L water
  • 2 slices of fresh ginger (optional, or a pinch of ground ginger)
  • A little cooking oil

Cooking Instructions

Step 1

Begin by blanching the chicken pieces in boiling water for 2-3 minutes. This step is crucial for removing impurities, odor, and blood, ensuring a clean and clear broth.

Step 1

Step 2

Rinse the blanched chicken thoroughly under cold running water. Trim away any excess fat from the chicken skin; this will result in a lighter, less greasy broth.

Step 2

Step 3

Prepare the vegetables. Cut the cabbage and carrot into bite-sized square pieces (about 0.5cm thick). Finely chop the green onion. If your tteokguk tteok are hard, soak them in cold water for a few minutes to soften.

Step 3

Step 4

Heat a little cooking oil in a pot over medium heat. Add the chicken pieces and carrot slices, and sauté them until lightly browned on both sides. Searing the chicken enhances the depth of flavor in the broth.

Step 4

Step 5

Pour in 1.5-2 liters of water and bring to a boil over high heat. Add the two slices of fresh ginger to help eliminate any gamey smell from the chicken. If you don’t have fresh ginger, a small amount of minced ginger or ginger powder can be used as a substitute.

Step 5

Step 6

Once boiling, reduce the heat to medium-low and simmer until the chicken is thoroughly cooked. You’ll notice the broth turning milky and rich. Add more hot water if the liquid reduces too much during simmering.

Step 6

Step 7

Ensure the chicken is fully cooked. For thicker cuts like chicken thighs, making a small incision with a knife or piercing with a fork will help them cook evenly and quickly all the way through.

Step 7

Step 8

When the chicken is tender, add the chopped cabbage, soaked tteokguk tteok, and the ramen seasoning powder. Stir everything well to combine.

Step 8

Step 9

Once the cabbage and rice cakes are slightly tender and the broth comes back to a boil, add the ramen noodles. Gently loosen the noodles to prevent them from sticking together.

Step 9

Step 10

Continue to boil for about 4 minutes, or until the ramen noodles are cooked to your liking. Turn off the heat, garnish generously with the chopped green onions, and your delicious Dak Gomtang Tteok Ramen is ready to be served hot!
