A Delicious Chicken Curry Fried Rice Recipe Using Leftover Chicken
Did you cook too much chicken and have some leftovers? Instead of letting them go to waste, turn them into a delicious and satisfying meal! My kids didn’t finish all the chicken I made, likely because I cooked a bit too much. So, I shredded the leftover chicken meat and made a simple fried rice with oatmeal. Although I don’t usually eat much chicken, I find myself enjoying it more when I’m on a diet – perhaps everything tastes better when you’re dieting! Even though this fried rice is made with shredded chicken and oatmeal, it was so incredibly tasty, especially as a diet meal, that I found myself wishing for more after finishing the whole bowl. Main Ingredients- 1/2 cup Oatmeal
- 1 Cabbage leaf (shredded)
- 1/2 cup Chicken (shredded or finely chopped)
- A pinch of seaweed flakes (for garnish)
Seasoning & Other Ingredients- 1 Tbsp Olive oil
- 1/3 cup Water
- 1 Tbsp Curry powder
- Chili seasoning (to taste)
- Green onion (chopped)
- Sesame seeds

Cooking Instructions
Step 1
First, carefully remove the bones from the leftover chicken and shred or finely chop the meat. You can use any part of the chicken, such as breast or thigh meat. This ensures the chicken is evenly distributed in the fried rice for a more delicious bite.
Step 2
Wash and prepare the cabbage leaf, then shred it thinly or dice it into small pieces for a pleasant texture in the fried rice. The crispness of the cabbage will enhance the overall flavor.
Step 3
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the shredded cabbage and the prepared chicken. Sauté them together until the cabbage becomes slightly translucent, allowing the chicken’s flavor to infuse into the oil. Sautéing thoroughly is key.
Step 4
Once the cabbage and chicken are sautéed, add 1/2 cup of oatmeal and 1/3 cup of water. Stir continuously as the oatmeal absorbs the liquid and cooks to a soft consistency. Now, add 1 tablespoon of curry powder and chili seasoning to your preference, mixing well to combine. Ensure the aroma of curry and chili evenly coats all the ingredients.
Step 5
When all ingredients are well-cooked and the seasonings are evenly distributed, stir in the chopped green onion, a pinch of sesame seeds, and a dash of sesame oil for added fragrance. Transfer the fried rice to a serving bowl. Sprinkle with seaweed flakes for a visually appealing garnish.
